Rather than a recipe today, I want to show you one of my best shortcuts! You know those days when you are so tired you really don’t want to take time to get something on the table, so instead you stop for take out, grab something easy, come home and toss it on the table? Well there’s an easy way to do that, but still offer up quality food for your family!
My easy, no cooking meal is when I stop by a restaurant with a salad bar. I get a single serving salad to go and omit the lettuce and salad dressing. Just stick with all of the wonderfully fresh and delicious vegetables.
Peas, sliced cucumbers, beats, beans, red lettuce, shredded carrots, chopped onions, crunchy radishes, sesame seeds, cheese & croutons – you name it, pile it on! Come home and simply cut up the lettuce. Place everything in a bowl, dress with your favorite salad dressing and wa-la! You have an amazing salad – little effort and minimal cost!
