Meal planning and prepping tips
If you're new here...
Every week, I share a free meal plan for you to use the following week. You'll have seven main dish recipes, along with a few extras and of course dessert.
Typically the weekly meal plans are named by number of the week and date. For example, if the plan is for the first week of January, I'll name it Weekly Meal Plan 1 - Jan 3-9. Next year the plans will be updated for the corresponding dates and tasty new recipes!
Don't forget - if you have a busy day and plan on eating out, just drop a day off the menu and adjust the meal plan to fit YOUR busy life!
Here are some shortcuts and tips for this week's menu!
- Taco Spaghetti lasts 3-4 days in the fridge and leftovers freeze great!
- Be sure to have the butcher thinly slice the beef for Korean BBQ Beef. It doesn't cost anything extra and will save you a ton of time!
- Take the turkey out of the freezer on Tuesday in preparation for cooking on Saturday.
- Leftovers pulled pork makes a great topping for tacos, nachos or quesadillas!
- Pick up store-bought pie crust for that yummy apricot pie!
Korean BBQ Beef
This meal is super easy to make and absolutely delicious. It stretches a buck in the BEST way!
The Korean BBQ Beef is marinated in a quick sauce and seared on the grill for just minutes. Place over your favorite rice and top with canned mandarins. So easy and so good!
Grab some mangos while you're at the store and make this quick mango salad. It will top your bowl perfectly!
The bright fresh flavor of Mango Salsa pairs perfectly with the spicy beef!
Pulled Pork Sandwich
Easy sandwiches are a great weeknight meals and what is easier than using your crockpot!
Let's keep dinner easy tonight! Let the pulled pork cook in the slow cooker. Meantime you rab a bag of chips and some store-bought slaw to top the sandwich - enjoy!
I have made some outstanding casseroles lately and this one is right up there at the top!
And since it's Taco Tuesday, then Taco Spaghetti Casserole is the perfect meal! This pasta is cheesy and delicious, filled with taco flavor. It makes a huge casserole - enjoy!
I know I should tell you to grab a bag salad and serve that with this pasta but I like it with is chips and salsa.
I know... it's a carb overload, but honestly it's so good together! Try this homemade Salsa Verde with it - yum!!!
Chicken Tetrazzini Stew
This stew is filled with chicken, mushrooms and pasta. The creamy sauce is the BEST.
Using rotisserie chicken makes this meal come together quickly and it's delicious!
Chicken Tetrazzini Soup is rich and creamy, everyone will love it!
This tomato tart is easy to make using puff pastry it's dynamite! Topped with thinly sliced tomatoes, capers and cheese it's like a lovely little sandwich!
Easiest and best roast shrimp ever! Super simple to make either on a sheet pan or air fryer.
Rosemary Baked Potatoes
Potatoes are always the best side dish! These are oven roasted and the roast very quickly when they are finely diced. These turn out golden and crispy every time!
Rosemary Baked Potato Nuggets will be a new favorite side dish!
Doesn't this look amazing?!!! Now is the time to still be enjoying citrus while it is at it's peak! This lovely orange salad takes only minutes to make.
Layer the salad with greens, sliced citrus and pistachios - yummy!
Ham and Potato Soup
Ham and Potato Soup can be made in the instant pot or stovetop - take your pick! It's perfect if you have some leftover ham or a ham slice. You really don't need much!
It's a lovely meal all by itself! If you'd like some fresh homemade bread to go along with this soup I'm loving this no-knead Parmesan Bread - looks fantastic!
Turkey and Stuffing
Now that the holidays are past you can actually past you can find turkey breast at the store!
Besides... who says it's only made at Thanksgiving? Slow Cooker Turkey and stuffing is delicious and easy to make! A great weekend meal!
Roasted Brussels sprouts
Roasted Brussels sprouts are the best side dish and go great with turkey and stuffing. Hey... grab some canned cranberries and call it a belated Thanksgiving! Enjoy!
Spring is officially here! (or it will be in just a couple of days!)
