- rotisserie chicken or shredded chicken breasts, really any leftover chicken will work great in this recipe.
- canned tomatoes with green chilies {Ro-Tel} - If you cannot find Rotel tomatoes, use fire-roasted tomatoes, canned or fresh salsa instead. Tomato sauce would work too if you mix a tablespoon of green chilis with it.
- chicken taco seasoning or low-sodium taco seasoning mix.
- canned black beans
- shredded pepper jack cheese, shredded Mexican cheese or cheddar cheese if you'd prefer
- crushed tortilla chips
- lettuce shredded
- diced fresh tomatoes
- sour cream
Optional toppings - thinly sliced green or diced red onions, black olives, diced bell peppers, or any of your favorite taco fixings!
Use ground beef seasoned with taco seasoning in place of the chicken for a beefy casserole.
Drained whole kernel corn or diced bell pepper would add great flavor to this simple casserole recipe.

- Preheat the oven. Prepare casserole dish, set aside.
- In a large bowl, combine the chicken, Rotel, taco seasoning and black beans, stir until combined.
- Spread half the crushed tortillas on the bottom of the pan.
- Top with the chicken mixture.
- Add the remaining chips and top with cheese.
- Bake at 350˚F for 20-25 minutes until hot and bubbly.
- Top the casserole with lettuce, diced tomato, sliced green onions, cilantro, or sour cream. Serve and enjoy!

Top Tip
You can use any kind of cooked chicken. A rotisserie chicken is my go-to, but you can also use Mexican-flavored shredded chicken.
- I think Doritos Nacho Cheese Chips give the best flavor in this recipe. But of course use your favorite flavor!
Storage
Refrigerate - Store leftovers in an airtight container for up to three days in the fridge. I don't recommend freezing this casserole as the tortilla chips will become soggy.
Reheat - This is best reheated in the oven. The tortillas will crisp up nicely!

- 9x11 casserole dish
Ingredients
- 4 cups shredded boneless skinless chicken
- 10 ounce can Rotel
- 1 packet taco seasoning
- 16 ounce black beans one can, drained and rinsed
- 2 cups pepper jack cheese shredded
- 5 cups tortilla chips crushed
- 1 cup shredded lettuce
- 2 roma tomato
seeded and diced
- ¼ cup sour cream
Instructions
- Preheat the oven to 350 degrees. Spray casserole dish with non stick cooking spray, set aside.
- In a large bowl, combine the chicken, Rotel, taco seasoning and black beans, stir until combined.
- Spread half the crushed tortilla in the bottom of the casserole dish.
- Top with the chicken mixture. Spread evenly.
- Add the remaining chips and top with cheese.
- Bake at 350˚F for 20-25 minutes until hot and bubbly.
- Top the casserole with lettuce, diced tomato and sour cream. Serve immediately.

Made this another time using refried beans instead of black beans. This is tonight's dinner with a cheat. I didn't layer, I spread the chips on the top and then put cheese on them. Like a deep dish taco pizza. Will let you know!

It made it much harder to dish it up. Kind of became taco stew. LOL I would not mind trying it again, but this time putting that all on the bottom. The addition of a can of potatoes was awesome too. Leftovers tonight!
