FAQ's

Can I put cream cheese in chicken casserole?

Yes! This recipe calls for cream cheese though you can also add cottage cheese. All of these ingredients help to make this casserole extra creamy and delicious!

What type of chicken should I use?

You can use any type of cooked chicken that you have on hand. Leftover rotisserie chicken or baked chicken breasts both work great in this recipe.

Do you cover chicken casserole when baking?

Yes, this casserole is covered with foil while it bakes. This helps to prevent the cheese from browning too much. Just be sure to remove the foil for the last few minutes of baking so that the cheese can get nice and bubbly.

Can I make chicken casserole ahead of time?

You can assemble this casserole and place it in the fridge for up to 24 hours and then bake it when you are ready to serve.

Things to know

  • Be sure to spray the casserole dish with nonstick cooking spray or great with unsalted butter so that clean-up is a snap.
  • Make sure that you boil the noodles to al dente. This will help to prevent them from getting mushy when they are baked in the casserole.
  • Shredded chicken is the star of the Million Dollar Chicken Casserole recipe. You could use rotisserie chicken or boiled chicken. Just make sure it’s fully cooked before adding it to the casserole.
  • You can freeze this casserole, however, I found that the noodles get a little mushy after thawing, so just keep that in mind if you plan to freeze this dish.
  • Like the Tuna Casserole Recipe, topping it with French fried onions, pork rinds or a crunched up sleeve of Ritz crackers would be tasty! Oh, and if you're wondering what to serve with Tuna Casserole, these are my favorite side dishes!
  • Garnish this dish with green onions, or some fresh parsley.

Variations

  • I recommend full-fat cream cheese. It makes the richest sauce.
  • Mozzarella cheese is my favorite in this dish, but you could also use cheddar cheese or pepper jack.
  • Parmesan cheese is used for both flavor and texture in this dish. If you don’t have it on hand, you could use another hard-grating cheese like Romano.
  • Half and half is equal parts milk and cream. You can also use all milk or all cream in this recipe. The higher the fat content, the richer the sauce will be.
  • A crunchy topping would be terrific as well. Crushed Ritz crackers is super tasty.

Storage

Refrigerate - Allow the casserole to cool completely and then store in an airtight container in the fridge for up to 3 days.

Freezer - Allow the casserole to cool completely and then store in an airtight freezer-safe container for up to 2 months. Thaw overnight in the fridge and then bake according to the recipe instructions.

Reheat - To reheat, just place the casserole in a 350-degree oven until heated through. You can also microwave at 50% power for one to two minutes.
