Meal planning and prepping tips

If this is your first time meal planning, let me give you some tips to make it simple!

Save money at the grocery store

Shop once with a full list. I don't know about you, but every time I walk in the door at the grocery store I will spend at least $50 I hadn't planned to spend. Go to the store once if at all possible!

Keep an inventory of the food you have on-hand to ensure you're not purchasing ingredients you already have on-hand.

Weekly Meal Plan 51 - shortcuts and tips

  • This is a great week to use your leftovers. Leftover turkey or ham - perfect timing for soup and casseroles. Sometimes it's easy to forget what's in the freezer and not use it timely.
  • I like the switch up of fajitas after the holiday. It's a great changeup of flavors and will make them taste even better when you enjoy them on Monday!
  • The Korean Black Bean Noodles are a special meal. Don't forget to top them with a splash of vinegar. It's amazing what it does to the flavor.
  • Speaking of flavor - that Black Eyed Pea Soup? AMAZING!

  • Freezer containers stack well. I love the sizes available here.
  • Still a big fan of these perforated plastic bags to keep fruit fresh longer.
  • Are you meal prepping? These are perfect for planning ahead!

Sunday - Chicken Fajitas

Fajitas in the Oven are always a favorite!

Tender chicken, bell peppers and onions seasoned with spices. Grab some tortillas and a bag of chips. Enjoy your meal!

Monday - Crockpot Chicken Spaghetti

The Crock Pot Chicken Spaghetti is a comforting family favorite. Packed with chicken, pasta in a creamy sauce, it's family favorite. The best part (just like the Chicken Spaghetti Casserole) is that it's incredibly easy to make!

Serve with 3 Ingredient Steamed Green Beans and Cast Iron Skillet Cornbread.

Tuesday - Sausage Cassoulet

This dish has a fun name, the Hairy Biker Sausage Casserole when really it's just beans and sausage AND it's delicious! Sop it up with easy dinner rolls and you have a meal fit for a king!

Wednesday - Egg Salad Sandwich

Let's keep dinner simple tonight! This is the BEST Egg Salad and will make a wonderful easy meal tonight. Use the Air Fryer Boiled Eggs recipe to make the eggs for the recipe. Serve with a bags of chips and pickles. What a great meal!

Thursday - Taco Salad Casserole

Everything about this is delicious and easy! It's a simple easy meal that's fun and flavorful.

Serve Taco Salad Casserole with a handful of chips, that's really all you need!

Friday - Million Dollar Chicken Spaghetti

Grab your chopsticks and dig right in!

Korean Black Bean Noodles {Jjajangmyeon} is a Korean-Chinese dish. It has a thick, silky sauce is packed with pork and diced vegetables.

You can find the black bean paste at Asian Markets or online. Plan ahead so you can make this special dish!

Saturday - Christmas Eve - Appetizers

Personally I love serving great appetizers on Christmas Eve.

Some of my favorites are Italian Stuffed Mushrooms, Roast Beef Rollups, Sausage Balls and Stuffed Celery. The Christmas Charcuterie Board would make the meal really special!

Dessert - Rolo Stuffed Sugar Cookies

These sweet treats only take minutes to make. They start with.... pre made sugar cookie dough and are stuffed caramel candies. Rolo Sugar Cookies are perfect for a fun snack and trust me.... all you will need is a glass of milk for the jolly old elf! 🎅🏻
