Sweet sugary Rolo Sugar Cookies are filled with caramel and chocolate. Simple to make, these chewy cookies have a gooey center. These stuffed sugar cookies taste like you've been baking all afternoon! (But this easy recipe only takes minutes to make!)

You're going to love this recipe for soft sugar cookies! Using store-bought cookie dough will save you a ton of time without compromising on flavor! Like my recipe for Strawberry Cake Mix Cookies, these fun cookies only need just a handful of ingredients!

  • Pre-made sugar cookie dough, though you can really use any type of store-bought dough. Chocolate chip, peanut butter or chocolate dough!
  • Rolo candy
  • Sprinkles - actually these are optional, but why wouldn't you want to use some pretty sprinkles? Customize the sprinkles for a holiday or use your favorite! It dresses them up and makes the cookies more fun!

  1. Pre heat oven, prepare baking sheet by spraying with nonstick coating or using parchment paper.
  2. The first step is to unwrap the candy and press one of the caramel rolos into the center of the cookie dough.
  3. Pinch the end to seal the dough around the candy and roll into a ball.
  4. Roll mixture in sprinkles and place cookie dough ball on prepared baking sheet. Bake according to package directions.

FAQ's 

What is in a Rolo?

Do you need to refrigerate the dough before baking?

After stuffing the sugar cookie dough with Rolo's then rolling them in sugar the dough became quite soft. I thought maybe they would spread out all over the pan during baking. But they didn't!

I did not refrigerate after molding the dough around the cookies. Test your first batch to be sure it doesn't spread as well.

Should Rolo Sugar Cookies be refrigerated after baking?

No, these are best stored at room temperature.

How long do they keep?

Store in an airtight container and they will keep for about two weeks (well.... not in my house, sweets don't last long here!) Frozen they will last up to three months, just be sure to seal well.

Tips

  • More dough on the bottom will keep the candy from seeping when baking.
  • These cookies are better if slightly under-baked.
  • No need to refrigerate, store at room temperature (so you get the gooey caramel goodness!)

Expert tip: I used Pillsbury's pre-made sugar cookie dough. If you use another brand or use your own recipe for the dough, bake at the temperature/time that recipe calls for.

Variations

  • Just about any type of candy bar can be substituted for Rolo's - snickers bars, 3 musketeers - YUM!! Even balls of cookie dough are super yummy!
  • If you have pre-made peanut butter cookie, chocolate chip cookie dough or even cake dough cookie mix would be delicious as well.
  • This time of year I roll it in holiday sprinkles, but you can vary the sprinkles for your event.
  • Want to use homemade dough? This sugar cookie recipe is tried and true family favorite!

Storage

Store in your cookie jar on the countertop. These are best when enjoyed at room temperature!

Freeze: seal well in an airtight container and freeze up to three months.

For fresh baked flavor microwave for 20-30 seconds or place in your air fryer for a minute or two - bonus? When using the air fryer you'll also get that just baked aroma!

Rolo Sugar Cookies

Equipment

Ingredients

  • 1 pre-made sugar cookie dough
  • 3 packages of rolo candy
  • ¼ cup sprinkles

Instructions

  • Preheat the oven to 350 degrees
  • Slice or separate the pre-made cookie dough into equal pieces.
  • Unwrap the Rolo candies and press one into the center portion of dough.
  • Pinch the end to seal the dough around the candy and roll into balls of dough.
  • Roll the cookie dough balls in sprinkles and place on ungreased cookie sheet. Bake according to package directions. Do not overbake.
