  • strawberry funfetti cake mix - no funfetti cake mix? Use a strawberry mix and add extra sprinkles.
  • butter or canola oil
  • eggs
  • extra sprinkles - though these are optional a dash of sprinkles on the top of each cookie really make them look extra festive

  1. These cake mix cookies are so simple to make! You'll start by mixing together the eggs, butter and cake mix.
  2. Add additional sprinkles and mix until smooth.
  3. Using a small ice cream scoop, shape into 1 inch balls.
  4. Top with a pinch more sprinkles (can you have to many sprinkles?!!)
  5. Bake until just set.

What is the best way to store Funfetti Cake Mix Cookies?

I put them in a ziplock bag to keep them fresh. You can leave on the counter for 3-4 days or refrigerate for up to a week.

Do they freeze well?

These cookies freeze great! I pack them into a ziplock bag. Frozen they will last up to three months. Well.... not in our house, more like two weeks haha. Cookies don't last long here!

Can you make them from scratch?

Absolutely! If you'd prefer not to use a cake mix here's a recipe for a white cake mix that you can substitute. Add ¼ sprinkles to the mix. You'll need to add strawberry extract and pink food coloring or just leave them white - fun and festive either way!

Tips

  • It's best not to over-bake these cookies. Bake until golden brown on the bottom and just set in the middle.
  • You can crowd these on the cookie sheet, they really don't expand while baking.
  • Using a small ice cream scoop will keep them uniform in size and ensure they bake evenly.
  • An extra pinch of sprinkles on top of them makes the cookies super festive!

Ingredients

  • 1 15.5 oz. strawberry funfetti cake mix
  • 2 eggs
  • ½ cup butter melted
  • ¼ cup sprinkles optional, but they make these cookies even prettier!

  • Preheat the oven to 375 degrees
  • Mix together the cake mix, eggs and butter.
