Easy Shrimp Tacos with Baby Bok Choy Slaw

It’s Taco Tuesday and I gotcha covered! But don’t get me wrong, it doesn’t have to be Tuesday for you to throw down some easy shrimp tacos! This is a great option for a weeknight meal. Sweet succulent shrimp grill up quickly and pair perfectly with crunchy bok choy slaw and make for easy eats. All this takes less than 30 minutes to make!
I was inspired to cook this meal from the package I received from San Miguel Produce – imagine if you will a giant box filled with bok choy!
Have you used bok choy as an ingredient before? Like cabbage it’s quite crunchy. Unlike cabbage it’s super flavorful! It can stand up to high heat cooking and I figured if it could do that, it would also make a delicious slaw.
And you know what?…. I was right! Sweet and crunchy this slaw is as delicious as it is pretty! Don’t you love these colors? With the bright crunch from the slaw, sweetness from the carrots and mango – the flavor is amazing! It’s perfect for cookouts too because there’s no mayonnaise.

I received a lot of bok choy to work with and what I didn’t use? I popped directly into the freezer (bag and all) and used it for an amazing stew I’m going to share with you soon! Yes, you can freeze their bok choy in the bag for future use!
Shrimp Tacos are always great for a quick weeknight meal because they cook so quickly, only a couple of minutes per side. But I’m going to suggest one extra step – see all that char around the corn shell? Be sure to grill the tortilla also. Toss them right on the grill. It only takes about 30 seconds per side and will give you that restaurant flavor and make your taco even more delish!
I choose extra large peeled and deveined shrimp. Mostly because… I’m lazy – you know that right? 🤣 Anything to take a quick shortcut, what can I say it’s how I roll! Another easy shortcut is the quick Asian spice rub that’s sprinkled on the shrimp right before they are tossed on the grill.
No shrimp? No problem! This salad would be delicious paired with pork, grilled chicken or even topping off Slow Cooker Mushroom Burgers! This slaw is so packed with flavor it’s absolutely delicious! (Vegan too but shhh…. no one needs to know how healthy it is! That will be our secret!)
