How can you tell if chicken is done?

Using a meat thermometer insert into the thickest part of the meat. Chicken is done when it reaches 165 degrees.

What do you soak chicken in to make them tender?

Citrus is great to tenderize chicken - lemon, lime or orange is always a great choice!

Can you marinate a chicken too long?

Yes you can, especially if it's too acidic. It will change the texture of the chicken making it mushy - ewe!

What is the best way to marinade chicken?

A plastic bag or zip-top bag is a great way to marinade the chicken. Be sure to place it in a large bowl just in case it springs a leak. Or place it in a large baking dish.

Things to know

  • The meat should be firm, not rubbery. Don't overcook the chicken; nobody likes dry chicken!
  • Use a meat thermometer to check the temperature of the meat.
  • Cutting into or slicing the meat prior to resting will allow all of the juices to escape and make your chicken dry.

Discard any of the Mexican marinade that has been used. Do not reuse the chicken marinade.

Storage

Leftover chicken can be stored in an airtight container and refrigerated for up to three days.

As I was writing this post, Dan looked over my shoulder at the pictures and said "ooh! I forgot how good that chicken is, can we have that for dinner again?!" I stopped what I was doing, went into the kitchen and pulled some frozen chicken breast out of the freezer. Dinner for tomorrow night? Decision made!

What Dan asks.... Dan gets! Hey... he spoils me, so I can do the same for him! 😀

We have a version similar to this, minus the chili powder and cumin. I can only imagine that extra little pizzazz that those two elements contribute to the flavor profile of this gorgeous grilled chicken. Thanks so much for sharing!
