Slow Cooker Beef Stroganoff without Cream of Mushroom Soup

Tender chunks of beef, sweet onions, and earthy mushrooms combine in a creamy sauce to make this yummy Slow Cooker Beef Stroganoff. The classic recipe, typically reserved only for special occasions, is transformed into an easy weeknight meal!

It's delicious and because it's made in the crockpot, the prep is minimal! This affordable meal is perfect for busy weeknights when time is short!!!

See, right? My crock pot recipes have been a big hit lately! Like Crockpot Paella, Slow Cooker Chicken Enchilada Soup and this recipe for Crock Pot Chicken Tortilla Soup so I know you're going to love this traditional beef stroganoff too.

Ingredients

Crock Pot Beef Stroganoff Recipe

You'll only need a handful of simple ingredients. For the exact measurements, please refer to the printable recipe card at the bottom of this post. 

  • stew meat - choose good quality meat and dice your own beef cubes
  • onion - thinly sliced
  • mushrooms - fresh mushrooms add an earthy, meaty flavor
  • gravy packets - easy seasoning in a packet!
  • rice or egg noodles - whichever is your favorite.

Instructions

This is an overview of the instructions for the slow cooker stroganoff. For the complete directions just scroll down to the bottom!

  1. Trim the meat and dice into one inch cubes.
  2. Slice the onions and mushrooms.
  3. Add the meat, onions and mushrooms to the crockpot.
  4. Top with gravy mixed with water.
  5. Add the lid and cook on low for eight hours.
  6. Finish by stirring in sour cream.
  7. Serve over rice or a bed of egg noodles topped with plenty of the rich sauce. Garnish with fresh parsley.

After adding the sour cream and combining, check the seasonings. Depending on the seasoning mix in the gravy packets you may want to add a dash of salt and black pepper at the end to suit your taste.

What is the creamy beef stroganoff sauce made of?

The vegetables, beef and gravy packet combine to make a delicious sauce, finished with sour cream - it's delicious!

How do you keep the sour cream from curdling when using the slow cooker?

To keep the sour cream from curdling, wait to add it until the end. Turn off the heat and stir in it.

What wine would go with stroganoff?

If you'd like to serve wine with this meal, Choose a light fruity red, that will pair best with this meal. A shiraz or Grenache would be a great choice!

Top Tip

The store sells pre-cubed beef stew meat, but I don't recommend purchasing the diced meat. Often times its not the best cut of meat. Here's what I recommend:

  • sirloin steak - an affordable cut and you can easily dice the beef and remove the fat
  • chuck roast - well-marbled, just trim off the fat
  • brisket - great flavor and the longer it's simmered the more tender it gets.
  • rump roast - another great affordable cut

Transform leftovers into a soup!

  1. Add ½ cup diced onions, 2 diced carrots and a steak of celery to a medium-sized pan with ½ teaspoon of oil. Sauté with 2 teaspoons of olive oil.
  2. Place leftovers including the beef stroganoff and the rice (or noodles) to a sauce pan along with a 2-3 cups of beef stock.
  3. Simmer to combine and ladle into bowls and enjoy!

Ingredients

  • 2 lbs cubed beef
  • ½ onion sliced
  • 2 cups mushrooms sliced
  • 2 0.87 packages brown gravy mix use the dry gravy packets
  • 1 cup water
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ cups sour cream
  • Cooked egg noodles or steamed rice and additional sour cream for serving.

Instructions

  • Remove any excess fat from the meat. Dice into one inch cubes.
  • Slice the onion and mushrooms.
  • Add the stew meat, onions, and mushrooms to the slow cooker. Season with salt and pepper.
  • Whisk the gravy mixes with the water in a small bowl; pour over the ingredients in the slow cooker.
  • Cover and cook on LOW for 8 hours. Do not open the lid of the slow cooker!
  • After 8 hours, stir in the sour cream. Ladle the stroganoff sauce over the noodles, mashed potatoes or rice. Enjoy!

      This is so funny, I came up with the same recipe except I use ground beef, cheaper and quicker and make it on the stove in a big skillet. I love my crockpot, and will try your version when I am going out one day.

        I usually make it on the stove with a good cut of steak. I love the slow cooker idea because you can use a less expensive cut of beef and it makes it so tender!
