Slow Cooker Meal Two – Fiesta Chicken Stew
This post is a continuation of the previous post, Slow Cooker Meal One – Chicken Tacos. If you’re looking to make the easiest and super flavorful meal, you can click this link for the post. Fiesta Chicken Stew uses some leftovers from meal one and reinvents them into an amazing soup, also utilizing the slow cooker! Let’s make mealtime easier I say!
Ok – enough of the tacos, now it’s time for meal two and we are going to take a few minutes before you leave for work (or out for the day) to do just a bit of prep work.
Remove the “starter soup” from the refrigerator and set it on the cupboard to bring to room temperature. You’ll also need to do some chopping.
- 1 red pepper, diced
- 1 cup of chopped cabbage – green or red, either will taste delicious
- 1 can of black beans, drained & rinsed
- 1 cup of cherry tomatoes
- 1 red onion, chopped
- 1 cup fresh or frozen corn
- 1 can hominy, drained & rinsed – this is optional, but I’d recommend it – so delicious in the stew!
Put all of the above ingredients in the slow cooker. Add in the “Starter Soup” from meal one and top it off with 2 cups of chicken stock and give it a good stir. Put the lid on tightly and set your slow cooker on low.
Set it, forget it – walk away, go to work or go play. Give it 8-10 hours on low and when you get home you’ll smell this amazing soup from the moment you open the door!

Slow Cooker Chicken Fiesta Stew
If you like, top it with some chopped tomatoes, cilantro, jalepnos or some chips or it’s perfect just the way it is. This is a hearty and flavorful stew.
Full of fresh flavor – you’ll have 10-12 cups of stew. It freezes great too! This is a great meal to feed a crowd and talk about stretching a buck!
