I love making this one-pot version of lasagna, especially when my schedule is busy. There are so many ways to adapt the recipe with simple ingredient substitutions or additions!
Making one batch of this flavor-packed ravioli lasagna will yield up to 8 servings - a decent amount for a generous family-sized meal, with any leftovers storing well in the refrigerator or freezer.
Ingredients

- Frozen ravioli - can substitute tortellini if you'd prefer. There's no need to thaw it. It goes from freezer to crockpot.
- Lean ground beef - though you can certainly substitute with ground turkey, ground chicken or Italian sausage.
- Spaghetti sauce - use your favorite store-bought or this AMAZING Marinara Sauce Recipe if you'd like to make your own.
- diced yellow onions, though you can certainly use red or a white onion if you'd prefer.
- Mozzarella cheese - it's the traditional choice and the cheesiest for lasagna; having said that, I often substitute Monterey Jack cheese. I love the flavor!

Lazy Day Lasagna
Ingredients
- 10 ounce bag of frozen ravioli
- 1 pound ground beef
- 24 ounce jar of your favorite spaghetti sauce
- 1 cup mozzarella cheese shredded
- 1 yellow onion diced
Instructions
- Spray the inside of the slow cooker with non stick cooking spray.
- Brown the ground beef in a large skillet on the stove. Drain fat if desired. Add the diced onion and cook for another 3-5 minutes until the onions are soft and translucent.
- Place about a third of the spaghetti sauce in the bottom of a slow cooker.
- Add half the frozen ravioli in an even layer on top of the sauce. Top with half the meat mixture and half the remaining sauce.
- Repeat with a second layer of ravioli, meat and sauce finishing with cheese. Cover and cook on low for 2 ½ to 3 hours.

You can store this easy meal in an airtight container (once completely cool) in the refrigerator for up to 4-7 days. Freeze leftovers for up to 3 months or making it ahead of time to be frozen till ready to serve. - Feel free to make use of your favorite frozen ravioli. There’s cheese and spinach filled ravioli, cheese ravioli, or even portabella mushroom filled ravioli that you can choose from.
- Using a 6 quart slow cooker is a good option for this Crockpot Lasagna with Ravioli since it yields a substantial amount of food. You could also use a larger pot if you'd prefer.
- For a brown finish to the melted cheese topping, simply remove the ceramic pot from the slow cooker and add it to the oven. Add a sprinkle of parmesan cheese and set on broil for about 5 minutes while watching attentively to prevent any burning. We love that caramelized cheese!
If you struggle with food stuck to the pot once the lasagne has been consumed, you may want to try filling the pot with hot water and adding a dryer sheet. After 2-12 hours of sitting, the pot should be a breeze to wipe clean since the dryer sheet helps to break down hardened food molecules. Who knew, right?!

Variations
If you’re in the mood to change things up a bit while still using this recipe as a base, consider these ideas:
Use a different cheese such as ricotta cheese or a combination of cheeses if you love a super cheesy lasagna. Cheeses that pair well for this lasagna include mozzarella, parmesan, Monterey Jack and ricotta cheese.
Make your crockpot lasagna super meaty by adding a layer of browned ground beef and Italian sausage to the crockpot or use beef stuffed frozen ravioli. Adding in frozen meatballs is another delicious option to further bulk up this lasagna.
Include some garlic for added flavor! Add it to the ground beef after it's browned and cook it for about a minute (if you’ve opted to include ground beef in your lasagna).
If you'd prefer, you can use regular lasagna noodles. But, of course, you'll miss out on the cheesiness of the ravioli. Just be sure to break up the uncooked noodles as you layer them into the crockpot.
