- Spray a large crockpot with nonstick spray.
- Add the chicken to the bottom of the crockpot. Top with black beans and peppers.
- Pour salsa over the chicken.
- Sprinkle with taco seasoning.
- Set on low, seal - cook for 8 hours.
- Remove chicken breasts, shred with two forks, return to crockpot, mix well and serve.

Yes, frozen chicken can be used however, it will increase the cooking time by about an hour.
It will take about 4 hours on high or 8 hours on low. I prefer cooking it on low as the chicken has a better texture.
You want to cook the chicken in liquid to prevent it from drying out. The salsa in this recipe will keep the chicken moist.
No, there is no need to flip the chicken. It's better when using a slow cooker if you don't remove the lid during the cooking process.

Reheat - Thaw in the refrigerator overnight. Place the desired amount of tacos on a plate and reheat at 30 second intervals or until heated through.

Ingredients
- 4 boneless chicken breasts 6-8 ounces each
- 1 cup chunky salsa
- 15 ounces canned black beans drained and rinsed
- 2 cups frozen sliced bell peppers
- 1 packet taco seasoning
- crunchy corn taco shells or flour tortillas, shredded lettuce, salsa and/or sour cream. Use your favorite toppings!
