It's time to spice up your weeknight dinner routine with 4 Ingredient Crockpot Chicken Tacos! This easy, tasty dish is perfect for taco night, and the best part is that you can customize it to your liking. So grab your favorite taco toppings and dig in!

  • boneless skinless chicken breasts or boneless skinless chicken thighs
  • sliced red, yellow, orange or green bell peppers, or use frozen bell peppers!
  • chunky salsa
  • black beans
  • for the tacos you'll need taco shells; corn or tortilla, shredded lettuce or shredded cabbage, fresh cilantro, sliced radishes, olives.

  1. Spray a large crockpot with nonstick spray.
  2. Add the chicken to the bottom of the crockpot. Top with black beans and peppers.
  3. Pour salsa over the chicken.
  4. Sprinkle with taco seasoning.
  5. Set on low, seal - cook for 8 hours. 
  6. Remove chicken breasts, shred with two forks, return to crockpot, mix well and serve.

FAQ's

What kind of salsa do you use for chicken tacos?

You can use any type of salsa that your family prefers; however, I like to use tomato salsa.

Can you put frozen chicken in the slow cooker?

Yes, frozen chicken can be used however, it will increase the cooking time by about an hour.

How long does it take to cook 2 lbs of chicken in a crockpot?

It will take about 4 hours on high or 8 hours on low. I prefer cooking it on low as the chicken has a better texture.

How do I keep chicken from drying out in the crockpot?

You want to cook the chicken in liquid to prevent it from drying out.  The salsa in this recipe will keep the chicken moist.

Should you flip chicken in slow cooker?

No, there is no need to flip the chicken. It's better when using a slow cooker if you don't remove the lid during the cooking process.

Things to know

  • Be sure to spray your slow cooker well with nonstick cooking spray or use a slow cooker liner for even easier cleanup.
  • I usually use about 1 ½ pounds of chicken for this recipe, but you can use more or less depending on how many people you're serving.
  • For a quick and easy way to shred chicken, you can use a hand mixer.
  • Another great way to use these 4 ingredient crockpot chicken tacos is to turn them into nachos by serving over tortilla chips and topping with queso.

Variations

  • If you want a little more heat, you can add a diced jalapeno to the crockpot along with the other ingredients.
  • For a creamy dish, feel free to add an 8-ounce block of cream cheese (delicious!) or a can of cream of chicken soup.
  • If you want a little more flavor, try adding some chopped onion or green chiles or a couple of tablespoons of homemade taco seasoning to the crockpot.
  • Load up the veggies adding corn, more peppers or zucchini.
  • This is a great topping for taco salad, burrito bowls, lettuce wrap or taco bowls - yum!

Storage

Refrigerate - Store these tacos in an airtight container in the fridge for up to 3 days.

Freezer - This is perfect for freezer meals and will last 3-4 months.

Reheat - Thaw in the refrigerator overnight. Place the desired amount of tacos on a plate and reheat at 30 second intervals or until heated through.

Ingredients

  • 4 boneless chicken breasts 6-8 ounces each
  • 1 cup chunky salsa
  • 15 ounces canned black beans drained and rinsed
  • 2 cups frozen sliced bell peppers
  • 1 packet taco seasoning
  • crunchy corn taco shells or flour tortillas, shredded lettuce, salsa and/or sour cream. Use your favorite toppings!
