Equipment

  • 1 Cast Iron Skillet

Ingredients

  • 1 tablespoon butter unsalted
  • 1 red bell pepper diced
  • 2 10.5 ounces cans cream of mushroom soup
  • 1 10.5 ounces can cream of chicken soup
  • 1 4oz can sliced mushrooms
  • 2 cups rotisserie chicken chopped
  • 1 cup water
  • ½ cup frozen peas
  • chopped parsley garnish
  • salt and pepper to taste

Instructions

  • Add the butter to a large skillet over medium-high heat.
  • Add the diced red bell pepper and cook until soft, about 5 minutes.
  • Next add the soups and heat through. Then add the mushrooms, chopped chicken pieces, water and frozen peas.
  • Heat and cook for 10 minutes.
  • Taste first, then season with salt and pepper if necessary. Serve garnished with chopped parsley. Serve over egg noodles or rice.

Notes

Refrigerate - Chicken ala king makes a super easy meal prep recipe. Simply spoon leftovers into an airtight container and they'll last for about four days. This will freeze for up to three months. Portion it into freezer bags or a plastic container and seal it tightly. Thaw in the fridge overnight before reheating.
You can microwave the leftovers and they'll taste great! Be sure to stir a few times to evenly warm everything up. Otherwise, warm over medium heat on the stove until it's hot again.
