FAQ's
There are a few ways that you can shred chicken. I like to use two forks and just pull the chicken apart that way. You could also use a hand mixer or even a food processor if you want to get really fine shreds of chicken.
I like to use boneless skinless chicken breasts for this recipe, but you could also use boneless skinless chicken thighs. If you are using bone-in chicken, you will need to cook it for a bit longer.
That's completely up to you! I prefer to shred my chicken while it is still hot so that the shreds are nice and moist.

Variations
- Make this chicken Mexican style by adding taco seasoning instead of the lemon pepper seasoning.
- You can also add more flavor to this chicken by adding onion powder, or onions to the pot.
- You can use a whole chicken instead of chicken breasts, but I recommend that you spatchcock the chicken so that it cooks faster.
- Add some spice to your chicken with a dash of chili powder, chipotle peppers, or hot sauce.
- Substitute barbecue sauce or coconut milk for the chicken stock, and you'd have a whole new dish!
