Tortilla Quiche

This Tortilla Quiche is a delicious twist on the classic breakfast dish. It's great for breakfast, brunch or an easy dinner! Because it's made with store-bought tortillas, eggs, and cheese, and filled with veggies. Unlike other quiches this one is easy to make.

Creative variations to try

  • ​Want to add more protein to this delicious quiche recipe? Try adding in some of your favorite breakfast proteins, such as cooked bacon, diced ham, or even cooked and crumbled sausage. 
  • Sometimes I like to add tomatoes to this healthy tortilla quiche, sun-dried tomatoes, sliced cherry tomatoes, or even diced tomatoes will all work well in this recipe. 
  • If your family is a fan of spice you can also add a dash of chili powder, red pepper flakes, or hot sauce to the eggs.

  1. Whisk the eggs and cottage cheese.

#2 Place the tortilla in a pie plate, add the egg mixture.

#3 Next add the vegetables.

Frequently asked questions (FAQ's)

How is a frittata different from a quiche?

The difference is that a frittata typically does not have a crust, and a quiche does. 

Can I leave out the cottage cheese?

​Techincally, you can however I don't recommend it. The cottage cheese or ricotta cheese adds not only additional protein but also extra moisture to prevent your quiche from drying out.

Deb's tips for the perfect dish

If you don't have a pie plate and are using a cake pan or a square pan instead, be sure to watch your quiche closely, as a larger pan will need less cooking time. 

  • If you are not a fan of the texture of cottage cheese, try blending it with a teaspoon of water or milk until you get a smooth texture first. 
  • I've found that it's better to chop the vegetables in small pieces so that they cook evenly with the eggs. 

How to store leftovers

Refrigerate - Store leftovers in an airtight container in the fridge for up to three days. 

Freezer - You can also freeze quiche by wrapping it tightly in plastic wrap and then aluminum foil and storing it in the freezer for up to three months. Thaw in the fridge overnight before reheating. 

Reheat - I've found the best way to reheat quiche is in the oven at 350°F for 10-15 minutes. Reheating in the air fryer works great as well.

Perfect pairings: what to serve with

This delicious breakfast recipe makes a great meal all on its own, however, sometimes I like to pair it with these Breakfast Potatoes, Air Fryer Bacon, or this Mexican Fruit Salad recipe.

If you're serving it for dinner, add a caesar salad. It's a great combination!

Tortilla Quiche

You'll love this simple dish! Though you can serve it for breakfast, it's an easy dinner too! Customize the ingredients for everyone's favorite meal.

Equipment

  • 2 9 inch pie plates

Ingredients

  • 2 10 inch tortillas for this recipe, you'll want burrito-size tortillas
  • 6 eggs
  • ½ cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup roasted red peppers
  • 1 cup fresh spinach lightly chopped
  • Optional cheese - feta cheese, shredded cheddar cheese, Gruyère or goat cheese are all amazing in this recipe. Use about 2 tablespoons for each tortilla

Instructions

  • Preheat the oven to 400 degrees.
  • Place the 2 tortilla in the center of 2 pie plates, making sure the bottom of the plate is covered and the tortilla goes evenly up the sides.
  • In a large mixing, whisk the eggs with the cottage cheese, salt, and pepper. Evenly split the egg mixture between the two tortillas.
  • Add the diced roasted red peppers and chopped spinach over the top of the pie. Lightly press it into the egg mixture.
  • If you're using cheese, add it now. Just sprinkle it over the top of the quiche.
  • Bake in the preheated oven for 15-18 minutes or until the middle of the quiche is set. Remove, slice and enjoy!
