Tortilla Quiche

You'll love this simple dish! Though you can serve it for breakfast, it's an easy dinner too! Customize the ingredients for everyone's favorite meal.

  • 2 9 inch pie plates

Ingredients

  • 2 10 inch tortillas for this recipe, you'll want burrito-size tortillas
  • 6 eggs
  • ½ cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup roasted red peppers
  • 1 cup fresh spinach lightly chopped
  • Optional cheese - feta cheese, shredded cheddar cheese, Gruyère or goat cheese are all amazing in this recipe. Use about 2 tablespoons for each tortilla

Instructions

  • Preheat the oven to 400 degrees.
  • Place the 2 tortilla in the center of 2 pie plates, making sure the bottom of the plate is covered and the tortilla goes evenly up the sides.
  • In a large mixing, whisk the eggs with the cottage cheese, salt, and pepper. Evenly split the egg mixture between the two tortillas.
  • Add the diced roasted red peppers and chopped spinach over the top of the pie. Lightly press it into the egg mixture.
  • If you're using cheese, add it now. Just sprinkle it over the top of the quiche.
  • Bake in the preheated oven for 15-18 minutes or until the middle of the quiche is set. Remove, slice and enjoy!
