Easy Fish Stick Casserole Recipe
When I first started working on this I thought, hmmm.... how can I make this GOOD (I mean really good!) when it's such a simple recipe and seriously, I nailed it!
Crispy fish stick over a bed of the best hashbrown casserole you've ever had. It's tasty, easy and made with pantry ingredients.
I love it when something comes together so easily!
Ingredients
For the exact measurements, please refer to the printable recipe card at the bottom of this post.
- Frozen shredded hash brown potatoes - you can use shredded or cubed. You can even use diced fresh potatoes.
- Cream of chicken soup - Cream of mushroom soup or even cheddar cheese soup can be used instead.
- mayonnaise you can substitute with sour cream if you prefer.
- lemon juice or lime juice and sweet pickle relish
- Dry ranch dressing - this is the stuff in the packet.
- shredded cheese - I used cheddar cheese in this recipe, but you vary the cheese. Try mozzarella, or swiss cheese, both would be delicious.
- frozen fish sticks - I used Gorton’s fish sticks. But you can switch this up and use breaded shrimp, crab cakes, or even chicken nuggets!
Step-by-step instructions

- Pre heat oven, prepare baking dish, set aside.
- In large mixing bowl, stir together well the soups, mayonnaise, relish, lemon juice, dry ranch dressing mix and 1 cup cheese. Fold in potatoes.
- Spoon into the baking dish and spread into one even layer.
- Sprinkle with the remaining shredded cheese.
- Cover the top of the casserole with fish sticks.
- Bake uncovered until hot and bubbly and fish sticks are lightly browned.
- Let sit 5 minutes before serving.

Yes, most frozen fish sticks are precooked. You will just need to heat them through in the oven on the casserole before serving.
Undercooked fish sticks will be pale in color and may have a rubbery texture.
No need to thaw the fish sticks.

Things to know
- If you want a little more flavor to your creamy sauce you can add black pepper, garlic powder, fresh dill, and onion powder.
- Be sure to thaw the hash browns. The easiest way take them from the refrigerator and place them in the fridge the night before. You can thaw them in the microwave as well.
Variations
- Add in some chopped vegetables or frozen vegetables such as bell peppers, onions, celery, etc to stretch this fish stick casserole recipe.
- For a spicy take on this casserole add hot sauce or a pinch of red pepper flakes.
- A splash of worcestershire sauce and a teaspoon dill weed to the sauce prior to baking is yummy!
Storage
Refrigerate - You can store this Fish Stick Casserole in the fridge for 3-4 days. Cool to room temperature before refrigerating.
Freezer - To freeze, first wrap the casserole dish tightly with plastic wrap. Then, wrap again with aluminum foil. Label and date the casserole, then place in the freezer for up to 2 months. When ready to eat, thaw in the fridge overnight and then bake as directed.
Reheat - Leftovers can be reheated in the oven, covered, at 350 degrees for about 20-25 minutes or until heated through.

Fish Stick Casserole Recipe

Ingredients
- 30 ounces frozen shredded hash browns thawed
- 21.5 ounces cream of chicken soup 2 cans
- 1 cup mayonnaise
- 1 lemon juiced
- 2 tablespoon sweet pickle relish
- 1 tablespoon dry ranch dressing
- 3 cups shredded cheese
- 18-24 frozen fish sticks as many as you need to cover the top of the casserole dish.
Instructions
- Preheat oven to 375 degrees. Spray a 13x9 glass baking dish, set aside.
- In large mixing bowl, stir together well the soups, mayonnaise, relish, lemon juice, dry ranch dressing mix and 1 cup cheese. Fold in potatoes.
- Spoon into prepared baking dish and spread evenly.
- Sprinkle the top of the potato mixture with the remaining shredded cheese.
- Top with as many fish sticks as you can fit, covering top of the casserole dish.
- Place uncovered in preheated oven and bake until bubbly and fish sticks are lightly browned, about 35-40 minutes.
- Let sit 5 minutes before serving.
