Meal planning and prepping tips

If you're new here...

Every week, I share a free meal plan for you to use the following week. You'll have seven main dish recipes, along with  a few extras and of course dessert.

Typically the weekly meal plans are named by number of the week and date. For example, if the plan is for the first week of January, I'll name it Weekly Meal Plan 1 - Jan 3-9. Next year the plans will be updated for the corresponding dates and tasty new recipes!

Don't forget - if you have a busy day and plan on eating out, just drop a day off the menu and adjust the meal plan to fit YOUR busy life!

Here are some shortcuts and tips for this week's menu!

  • Chicken Spaghetti lasts 3-4 days in the fridge and leftovers freeze great!
  • Make the dough for breadsticks on Sunday. (Don't worry this recipe is easy with complete step by step instructions.) You'll be set for dinner later in the week.
  • Make the pizza dough on Sunday as well. Split it into three portions and freeze. Remove from the freezer the day before you'll be making the pizza and leave it on the counter. It will be perfect when you're ready for pizza night!

Chicken Spaghetti

If you haven't tried my recipe for Chicken Spaghetti with Rotel now's the time! It's easy to make, cheesy and delicious, super creamy as well!

Serve with a Cucumber Tomato Salad - easy and delicious!

Crockpot Beef Stew

A bowl filled with beef stew, with a spoon tucked on the side of the bowl.

Slow Cooker Beef Stew and Dumplings is a hearty meal! Best part your crockpot does all the work!

Serve with Olive Garden Breadsticks!

Chicken Pot Pie Casserole

Chicken Pot Pie Casserole - it's not going to get any easier or more delicious than this!

Roasted Brussels sprouts is an easy side that cooks in the oven along with the casserole.

Mediterranean Lentil Soup

Vegetable soup in bowl with spoon on table.

Cheesy Ranch Chicken

Baked cheesy chicken on sheet pan.

Next up on the meal plan is Cheesy Ranch Chicken, and let me tell you, this one's a crowd-pleaser! This is the kind of dinner that feels like a treat but takes hardly any effort.

Pair it with roasted broccoli (because that cheesy ranch sauce is too good not to drag your veggies through!) and you've got an easy weeknight win.

Dessert - Butter Cookies Recipe

Butter cookies with pink sprinkles in glass bowl.

Crispy, sweet, buttery cookies - this old fashioned recipe is Dan's Grandma's recipe and has been in the family for years!

Homemade Butter Cookie Recipe - all you need is a cup of coffee, tea or glass of milk.
