Roasted Tomatillos Salsa Verde
I'm a big fan of all things spicy and delicious, you guys know that right? A great salsa or rich delicious Enchilada Sauce - those are flavors that make me a happy gal!
So today I'm excited to share another easy delicious recipe and though we just celebrated Cinco de Mayo, this recipe fits for grilling week because it's made right on the grill!
And you're saying salsa.... made on grill? You bet and it all starts with tomatillos!
Ingredients
- tomatillos - look a lot like a tomato but with a husk and have a distinctive tart flavor.
- Anaheim chili - a mild chili often used in Mexican cooking
- jalapeno - a spicy chili perfect for adding heat to your dish
- chicken stock - though you can use vegetable stock, I prefer the flavor chicken stock gives this dip
- cilantro - strong and distinctive fresh flavor
- onion - roasting them gives a smokey flavor
- salt - to flavor the sauce
- lime - to add bright, zesty flavor!
Instructions
- Preheat the grill to 400 degrees.
- Peel the tomatillos and rinse, slice the chili and jalapeño in half, remove seeds.
- Grill the tomatillos, chili and pepper until lightly charred.
- Blend all of the ingredients until well chopped.
- Serve with your favorite crackers and enjoy!
FAQ's
Tomatillos look a bit like a tomato but have a thin papery husk. Though they are cousins of tomatoes, they don't taste like them at all.
No, remove the thin shell or husk. Just peel it off and discarded before roasting. The surface of the tomatillos will be sticky, give them a rinse and they are ready to use.
You can, but they are quite acidic. Roasting them mellows the flavor, making them perfect for this dip!
Homemade Salsa Verde
As the tomatillos roast on the Indoor Searing Grill, they slightly change color and get light char marks. It only takes about 15 minutes.
This grill worked great! It would be a great option for apartment dwellers or a day.you just don't want to go outside!
Things to know
- The vegetables can be roasted in the oven under the broiler. Keep a close eye on them as they are roasting. Allow them to blister and char, but do not allow them to blacken.
- You can also roast them in a heavy skillet on the stovetop. Again, allow them to blister and char but not burn.
- If you're roasting indoors on a grill or on the stove, be sure to vent the area well; the aroma can be quite pungent! I speak from experience as I've had the aroma of roasted chilies permeate my contacts and burn my eyes. Both painful (and dangerous)!

Roasted Salsa Verde Recipe
Ingredients
- 7-8 tomatillos peeled and washed
- 1 Anaheim chili seeded and sliced in half
- 1 jalapeno seeded and sliced in half
- 1 cup chicken stock *vegan option - substitute water or vegetable stock
- ½ yellow onion rough chop
- 1 teaspoon salt
- 1 lime juiced
Instructions
- Clean and peel the tomatillos, set aside. Slice the chili and jalapeno in half, remove seeds.
- Preheat the grill to 400 degrees.
- Grill the tomatillos, chili and pepper until lightly charred.
- Add the grilled ingredients to a blender, adding in the remaining ingredients. Blend until well chopped.
- Serve with your favorite crackers and enjoy!
