Chicken Wings and Blue Cheese Dip
Are you into sports? Me, I love football I watch all the games and love the sport. Whether you’re a football fan or if you just go for the party, the Superbowl is fast approaching! But when I moved to Green Bay, WI – well that just sealed the deal and ever since I’ve been a Green Bay Packer fan. I’ve since moved from Green Bay, but still enjoy the games. When I get an invite for a Superbowl Party…or just about any kinda party, my go-to dish is Sticky Buffalo Chicken Wings.
The recipe is simple – you’ll have everything together in a snap and your guests will love them! You can use your favorite sauce or prepare your own. Here’s my Blue Cheese Dip and it goes fabulous with these wings. For this you’ll need 1/2 cup Greek yogurt, 1/3 cup mayonnaise, 1 teaspoon Worcestershire sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon salt and 1/2 cup blue cheese crumbles. Mix this all together & refrigerate. The yogurt gives it a tangy bite that goes so well with the wings!
Now it’s time to start cooking. Begin by parboiling the wings. Put the wings into a large stock pot and add 1/2 teaspoon chili powder, 1/2 teaspoon garlic salt, 1 teaspoon seasoning salt and 1/2 teaspoon pepper. Add enough water to just cover the wings. Set the pot on the stove over high, uncovered and bring to a boil – reduce to low boil for 15 minutes. Remove and drain well. Parboiling keeps the wings succulent and tender, not dry! This is easy and sooo much better than deep fried!
While the chicken is boiling, prepare the wing sauce – very simply it’s; 1 cup of your favorite barbecue sauce, 1/2 cup marmalade jam (homemade if you have it, but store bought is just fine too!) and 1/4 Buffalo Wing Sauce (I used Frank’s RedHot). Cook this over a low heat, stirring until the ingredients are well incorporated. The buffalo sauce gives it just a bit of spice and the marmalade a sweetness that becomes a sticky, gooey delicious coating for the chicken!
Remove the wing sauce from the heat and transfer it to a large bowl. Toss the wings on top and drench them in the sauce. Spread the wings out on a broiler pan lined with foil (if you want to make clean up even easier) and sprayed with non-stick spray. Broil them for about 9-10 minutes on side one – brush them with more sauce, flip and broil on side two, about 7-8 minutes until they have great caramelization.
Pile them on a big platter, add some celery, cucumbers and jicama – now adding the veggies isn’t just to make you feel better….it does cut thru the richness of the wings. Well….never mind….it is just to make you feel better, haha! Regardless, this will be the first thing gone at the party! Healthy….not really…but delicious and hey the Superbowl only happens once a year! 🙂

Chicken Wings and Blue Cheese Dip
