Air Fryer Roasted Carrots

These Maple Glazed Carrots in the Air Fryer are so easy to make and we love those crispy edges. Just like steamed brussels sprouts, this is the perfect side dish for any holiday meal! If you are looking for a different way to make carrots, you have to try these!

  • 4-5 medium size whole carrots - substitute baby carrots if you prefer. If they are super thick, you can slice them in half or adjust by adding more cooking time.
  • olive oil or avocado oil for a high smoke point.
  • maple syrup
  • parsley
  • salt and black pepper

  1. Peel, and clean your carrots. Cut them into julienne and place them in a bowl.
  2. Pour the oil and maple syrup over the carrots. Using tongs to mix.
  3. Sprinkle the dry parsley, ground pepper, and salt. Mix to coat the carrots.
  4. Place the seasoned carrots into the air fryer. Spread into 1 layer so they can cook more evenly.
  5. Cook at 400 degrees for 8-10 minutes. Shake the basket halfway through the cook.

FAQ's

How long do carrots take in air fryer?

It depends on the size of your carrots and how thick you cut them. I find that julienne carrots take 8-10 minutes at 400 degrees Fahrenheit.

Can you put foil in an air fryer?

Yes, however, you need to make sure that you keep the foil away from the heating element.

Can glazed carrots be made in advance?

Yes! You can make these carrots up to 2 days in advance. Just store them in the fridge and reheat them in the air fryer when you are ready to serve.

Things to know

  • Save your carrot peels in a freezer-safe bag in the freezer so that the next time you make homemade stock you have some carrot scraps to add to it.
  • For best results slice your carrots as evenly as possible so that they cook at the same rate.
  • You can line your air fryer basket with parchment paper for easy clean up.
  • If you have a smaller air fryer you may need to cook your carrots in batches as you don't want to overload the air fryer basket.
  • Make sure that you place carrots in a single layer so that they cook evenly.
  • The cook time may vary if you are using a different type of air fryer, so watch the carrots closely, you know they are done when they are fork tender.
  • If you are using larger carrots, you may need to use fewer carrots.
  • Pure maple syrup really works best for this recipe.
  • This recipe was tested in a Cosori 5.8 QT, if using a different air fryer you may need to adjust your time. At 8 minutes the carrots were cooked with a slight crunch and at 10 minutes they were fully cooked.

Whether you're oven roasting vegetables or using your air fryer, the caramelization brings out flavor and sweetness.

Variations

  • If you are looking for a little bit of spice, try adding a pinch of cayenne pepper to the glaze.
  • For a more savory version, try omitting the maple syrup and adding a tablespoon of balsamic vinegar to the glaze.
  • Try using different herbs such as thyme or rosemary in place of the parsley.

Storage

Refrigerate - These carrots will last in the fridge for up to 3 days in an airtight container. Reheat in the air fryer before serving.

Freezer - I do not recommend freezing these carrots as they will get mushy when thawed.

Reheat - When rewarming the carrots, place them back in the air fryer basket at 320 degrees F for 3 to 4 minutes.

Ingredients

  • 2 cups about 4 medium size carrots, cleaned and peeled, and cut into julienne
