This Lipton Onion Soup Meatloaf recipe is a delicious and easy way to make a flavorful meatloaf. The Lipton Onion Soup mix adds a wonderful onion flavor to the ground beef, and the ketchup and brown sugar give it a slightly sweet and tangy glaze.

This is a favorite meatloaf recipe. Leftovers make the best sandwiches, perfect for busy weeknights!

Onion Soup Mix Meatloaf Recipe

This is a hearty comfort food meal that your entire family will enjoy. It's such a great meatloaf, and it turns out moist and tender every time.

My favorite part is this is an easy recipe and only requires a few simple ingredients that you probably already have on hand - love that!

Ingredients you’ll need

For the exact measurements for this delicious meatloaf, please refer to the printable recipe card at the bottom of this post. 

  • ground beef
  • large eggs
  • stuffing mix
  • tomato juice
  • parmesan cheese
  • diced onions
  • an envelope of Lipton Onion Soup Mix
  • Worcestershire sauce
  • catsup
  • brown sugar
  • yellow mustard

Creative variations to try

For a nice flavor, you can use a mixture of ground beef and ground pork. But if you prefer a lower fat content for your meatloaf, ground turkey is an option.

If you want to switch up the flavor, try using a different onion soup mix such as mushroom. You can also add some shredded cheese, BBQ sauce, diced green peppers, or other mix-ins to the meatloaf before baking.

Of course, leftover meatloaf makes the BEST meatloaf sandwiches! I've even been known to make two so that we can save one for leftovers.

Step-by-step instructions

This is an overview of the instructions for the lipton's onion soup mix meatloaf. For the complete directions just scroll down to the bottom!

  1. Preheat oven to 375 degree. Line baking pan with foil or parchment paper for easy clean up.
  2. Place ground beef in a large mixing bowl.
  3. Add eggs, dry stuffing mix or bread crumbs, diced onions, tomato juice, parmesan cheese and Worcestershire sauce. Sprinkle in Lipton Onion Soup Mix and combine. Do not over mix .
  4. Place meat mixture on sheet pan or baking dish, form into loaf shape. 
  5. Combine ketchup, mustard and brown sugar. Slather over the top of the meatloaf.
  6. Place meatloaf in preheated oven. Bake for 1 hour to 1 hour ⅕ minutes. Or until your meat thermometer registers 160 degrees. 
  7. Remove from oven, cover lightly with foil and allow to rest for 10 minutes prior to slicing.

Frequently asked questions (FAQ’s)

What ingredient keeps meatloaf from falling apart?

Eggs are the binder that works to keep your meatloaf together.

Should you cover meatloaf when you bake it?

I don't recommend that you cover your meatloaf, if it's covered then it will be steamed instead of roasted.

Should I drain the grease from my meatloaf?

I always like to drain the grease so that my meatloaf does not become soggy.

Deb’s tips for the perfect dish

Be careful not to overmix your meatloaf, overmixing can result in a dry and crumbly meatloaf.

  • If you don't have parchment paper on hand to line your baking sheet you can also use aluminum foil.
  • The Lipton meatloaf recipe can easily be halved to make a smaller loaf. Just be sure to adjust the cooking time accordingly.
  • Instead of using a loaf pan, you can also shape it into a loaf and then bake it on a rimmed baking sheet.

The best ground beef ratio

The best fat-to-beef ratio for making meatloaf is typically 80/20, meaning 80% lean beef and 20% fat. This blend provides enough fat to keep the meatloaf moist and flavorful without becoming too greasy.

Using leaner beef, like 90/10, can result in a drier loaf, while fattier mixtures may cause excess grease to pool. The fat renders during cooking, adding richness and tenderness, helping to achieve a moist, well-textured meatloaf that holds together well.

How to store leftovers

Refrigerate - Store leftovers in an airtight container in the refrigerator for 3 days. But if you want to learn all the specifics about how long leftover meatloaf is good for, click over here!

Freezer - You can freeze this meatloaf, well wrapped, for up to 3 months. Thaw in the refrigerator overnight before reheating.

Reheat - Preheat the oven to 350 degrees. Place meatloaf on a baking sheet and reheat until warmed through, about 15-20 minutes. You can also reheat in the microwave at 50% power in 2-minute increments.

Ingredients

  • 2 pounds ground beef An 85/15 or 80/20 ratio will give you the best flavor.
  • 3 eggs

      I made this meatloaf today following the recipe but using ground turkey. I also used the whole box of stuffing because the mixture seemed to have too much moisture using only the one cup. It turned out very well and tasted just right! Thanks for a simple and delicious quick meal that will make great leftover sandwiches.

      This was the perfect meatloaf!!! So moist, and flavorful! (I used 1 pk of lipton soup mix and a box of stovetop stuffing crushed up) I also did half BBq and half Ket/Must bcuz I wanted both, lol! Although I changed a few things, your recipe was my guide! Thank you for a perfect meatloaf! Wish I could add my pic!
