FAQ's
Yes, it is best to use cold strawberries for the best results. I do recommend that you sit them on the counter for about 5 minutes before you dip them so that they are cold but not super cold.
I prefer to make them the day of as they taste best when they are fresh.
The best way to keep them from sweating is to store them in an airtight container without touching each other.
It can be difficult to fix if your chocolate seizes. First try adding a couple chunks of chocolate to the mixture and stirring vigorously. That will work if the mixture was overheated. If that doesn't work, stir a tablespoon of vegetable oil into the chocolate, again stirring vigorously.
Deb's tips
- To melt white chocolate, it is important to be very careful not to overheat it. The optimal temperature for melting white chocolate is between 88-95°F (31-35°C).
- To get the perfect consistency, I recommend using a double boiler or a microwave. This will help to ensure that your chocolate melts evenly and won't burn.
- Use large strawberries to make white chocolate-covered strawberries.
- Look for strawberries that are at the peak of ripeness, with a deep red color and no green spots. Purchase the strawberries on the same day you're going to use them.
- Change up the festive sprinkles to suit your occasion! Red, white and blue sprinkles for the patriotic holidays, or red and green sprinkles for Christmas and candy hearts for Valentine's Day!
- If the chocolate starts to harden, and you melted it in the microwave, you can return to the microwave for 15 - 20 seconds to thin it out again.
- Leave the green leaves on, it makes for a great presentation.
Variations
- If you are looking for a different twist, try adding different toppings such as crushed nuts, shredded coconut, gold luster dust or sprinkles.
- Instead of using white chocolate, you could also use milk chocolate, dark chocolate or semi-sweet chocolate.
- Instead of vegetable oil, you could also use coconut oil or vegetable shortening to temper your chocolate.
- I prefer to use high-quality white chocolate for this sweet treat, but you can use white chocolate candy melts if that's all you have on hand.
- For Valentine's Day, consider pink food coloring to this easy treat! Pink chocolate would be beautiful coating the juicy berries.
Storage
Refrigerate - For best results store in an airtight container and refrigerate for up to 2 days.
Freezer - They do not freeze well, it isn't an option.
