- Jiffy corn mix or your favorite cornbread mix.
- Creamed corn, though you can also use frozen corn or fiesta corn.
- Ground beef, ground turkey or chicken.
- Black beans, pinto beans or even kidney beans.
- Taco seasoning packet or a homemade taco seasoning.
- I used canned enchilada sauce, but you can also use homemade enchilada sauce to make it extra special.

Easy Tamale Pie Recipe
Equipment
- 1 9x13 casserole dish
Ingredients
- 1 pound ground beef
- 1 cup diced onion
- 1 ounce taco seasoning mix packet
- 15 ounce can of black beans rinsed and drained
- 15 ounces red enchilada sauce
- 8.5 ounce jiffy corn bread one box
- ½ cup sour cream
- 14.75 ounce can cream style corn
- 1 egg
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees. Prepare baking dish, spray with non stick cooking spray, set aside.
- Brown ground beef with onions. Drain fat. Add black beans, enchilada sauce and taco seasoning, combine well. Simmer 5 minutes, set aside.
- In a medium-sized mixing bowl, prepare cornbread topping. Add jiffy cornbread mix, creamstyle corn, sour cream and egg. Mix to combine.
- Pour beef mixture into casserole dish, top with shredded cheese. Spread cornbread mixture over the top.
- Baked uncovered for 40 minutes or until a toothpick inserted into the middle of the casserole comes out clean. Allow to sit 10 minutes before serving.

Substitute a can of Rotel for the enchilada sauce. If you can't find Rotel, use a can of diced tomatoes and a can of diced chiles. Or just spicy salsa!
Adding an extra egg to cornbread can help it come together and hold its shape more easily. It will also add a little bit of richness and moisture to the finished dish.
Yes, you can add drained canned corn to your favorite cornbread mix. Just stir it in right before baking to ensure that the ingredients are fully incorporated.

To make this recipe ahead of time, simply prepare the ground beef mixture and cornbread topping, then cover and refrigerate until ready to bake. When you're ready to bake, preheat the oven and proceed with the recipe as directed.

Variations
- If you are not a fan of jiffy mix, you can make a half-batch of homemade cornbread instead.
- If you want a little extra spice, you can add some chopped jalapeño peppers, or you can add a dash of chipotle powder or chili powder to the ground beef mixture.
- Green chiles would be an excellent edition. You can add them to the meat mixture or the cornbread.
- Bulk this casserole dish up a little, by adding diced bell pepper, drained pinto beans, green chilies, or your favorite vegetables.
Storage
Refrigerate: - Leftovers can be stored in the fridge for 3-4 days.
Freezer: - this dish can also be frozen. Freeze individual portions for quick and easy reheating or freeze the entire casserole dish for up to 3 months. Defrost in the fridge overnight before reheating.
Reheat: Reheat leftovers in the oven at 350 degrees F until warmed through. You can also reheat individual portions in the microwave.

We just love this recipe. I Will definitely make this again next month for our block party Cinco de Mayo celebration. I used 2lbs of mild ground turkey sausage with green enchilada sauce (we love this) instead of the red. No beans - added a small can of chopped green chilies. Just made this for a potluck but changed up a couple things. I added a can of rotel tomatoes with green chiles to the filling and since the beyond ground meat substitute was on sale I used this instead of beef. It was amazing and my vegetarian coworkers loved it.

I made this tonight and it was okay….some of us (3) thought the jiffy mix made it too sweet… may get adventurous and try masa next time. On the bright side my husband who isn’t a fan of spicy food aka Mexican cuisine……he actually liked it!

I make tamale pie a lot, and I love adding beans! I double this & freeze some in individual containers for quick meals later. I've used 1/2 black beans & 1/2 chili variety beans & the extra seasoning is great! My husband doesn't like cheese (any kind... I know! I married this guy??!! lol) Anyway, even the non-cheese half that I make is really good : )

Very easy and tasty! I baked the pie in a 11x7 pan since we like a thicker filling. I forgot to buy the creamed corn for the cornbread but I had regular corn so added it to the filling instead. Delicious! Big hit with my bachelor brothers! Will make often

Hello. Your recipe doesn't say what to do with the enchilada sauce nor the onions in the recipe for Tamale Pie. I'm assuming cook the onions with the ground beef but not sure what to do with the enchilada sauce.

You can use a 9"x13" baking dish, I've also used a 10.5"X7.5" and a large cast iron skillet. This is a very flexible, really you're baking it until the cornbread is cooked through.
