Marry Me Chicken is tender chicken breasts cooked in a creamy sauce that is bursting with flavor from the fresh tomatoes.  It's a delicious marriage of simple ingredients that you can make in no time, even on busy weeknights.

  • boneless skinless chicken breasts
  • salt and pepper
  • olive oil and butter
  • onion 
  • garlic
  • chicken broth
  • heavy cream
  • Parmesan cheese
  • Italian seasoning
  • red pepper flakes
  • cherry tomatoes

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent and fragrant.
  4. Pour in the chicken broth, scraping the bottom of the skillet to deglaze and pick up any browned bits. Let the broth simmer for a couple of minutes to reduce slightly.
  5. Lower the heat and stir in the heavy cream, grated Parmesan cheese, Italian seasoning, and red pepper flakes. Stir continuously until the sauce becomes creamy and well combined. Simmer for 2-3 minutes to allow the flavors to meld.
  6. Add the halved cherry tomatoes to the sauce, and let them simmer for an additional 2-3 minutes until they slightly soften.
  7. Return the cooked chicken breasts to the skillet, nestling them into the sauce. Simmer for another 2-3 minutes to let the chicken absorb some of the creamy goodness.
  8. Taste the sauce and adjust the seasoning with salt and pepper if needed.
  9. Garnish with chopped fresh parsley for a pop of color and added freshness.

FAQ's

Why is it called Marry Me Chicken? 

This recipe got its name because it tastes so good that it will make you want to put a ring on it! It's marriage proposal time! ❤️

Is this the same as Tuscan chicken? 

It is very similar however Tuscan chicken usually contains sun-dried tomatoes and spinach, and we left those out of this recipe. 

What should the internal temperature of the chicken be? 

Should be  165℉/74℃. Using a meat thermometer is the best way to ensure it's cooked properly.

Test kitchen tips

  • Make sure that your skillet is hot before you start to sear this chicken. This prevents the chicken from becoming tough and gives you a nice crust on the outside. 
  • Use a wooden spoon or spatula to scrape the bottom of the pan well. You want to get the brown bits into your sauce for the flavor. 
  • If you are on a low carb diet you can serve this delicious chicken recipe over a bed of cauliflower rice. 
  • The cooking time may vary based on the thickness of your piece of chicken. You can save a little time by using thin chicken breasts. 

Variations

  • Feel free to swap out the Italian seasoning for your favorite fresh herbs, fresh thyme, and rosemary will blend so well into this parmesan cream sauce.
  • Spinach and sundried tomatoes are great additions. Add it to the creamy sauce when you add the chicken back in.
  • Add some extra flavor to the delicious sauce by swapping out the chicken broth for white wine. 
  • Instead of fresh cherry tomatoes, you can use sun-dried tomatoes if you prefer the flavor of those. 

Storage

Refrigerate - Store leftover chicken in an airtight container for 2-3 days. 

Freezer - Due to the dairy in the creamy sauce I recommend that you do not freeze this. 

Reheat - You can reheat the chicken in the microwave on 50% power for 1-2 minutes or until warm all the way through. However, my favorite way to reheat it is in a skillet over medium-low heat until it is completely warm.
