Slow Cooker Honey Mustard Chicken

You'll love this recipe because it's a no-fuss dinner that delivers big flavor with minimal effort. The chicken cooks up juicy and tender, soaking in a rich honey mustard sauce that's both savory and just a little bit sweet.

Even the picky eaters won't put up a fight-and that's saying something! It's the kind of easy, crowd-pleasing meal that fits right into your weekly rotation.

Ingredients

  • 3 pounds boneless skinless chicken thighs or breasts (thighs = juicy magic, but both work!)
  • Dijon mustard and whole grain mustard (or more Dijon if you don't have this).
  • Apple cider vinegar adds brightness!
  • Montreal steak seasoning - No steak seasoning? Use 3 cloves of crushed garlic, ½ teaspoon salt and ¼ teaspoon pepper. I really like the short cut of the seasoning, but you do you!
  • Crushed red pepper flakes (now this is optional, but that little heat gives such nice balance.)

Equipment

  • 1 Crockpot

Ingredients

  • 3 pounds boneless skinless chicken thighs or breasts (thighs = juicy magic, but both work!)
  • ½ cup Dijon mustard
  • ¼ cup honey
  • ¼ cup whole grain mustard or more Dijon if you don't have this
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar adds brightness!
  • 2 teaspoons Montreal steak seasoning
  • ¼ teaspoon crushed red pepper flakes for a little kick optional
  • Chopped parsley for garnish optional, but it makes it look fancy

Instructions

  • In a small mixing bowl, whisk together the Dijon mustard, honey, whole grain mustard, olive oil, vinegar, and seasoning mix.
  • Place the chicken in the bottom of your slow cooker. Pour the sauce over the top of the chicken.
  • Cook on low for 6-8 hours or high for 3-4 hours. Chicken should be fork-tender and cooked through (internal temp of 165°F).
  • Remove the chicken and shred with two forks. Return the chicken to the sauce. Leave the lid off the slow cooker and let the chicken sit in the sauce for about 10 minutes with the slow cooker off. This helps the juices settle and thicken up a bit.
  • Serve: Over rice, mashed potatoes, egg noodles, or roasted veggies. Spoon that extra honey mustard goodness on top!
  • Garnish: Sprinkle with chopped parsley or a few mustard seeds if you're feelin' fancy.

Notes

Storage: Cool completely and store in an airtight container. Refrigerate up to three days or freeze for three months.

      Can I use chicken breasts instead of thighs?

      Of course! Chicken breasts or thighs work terrific for this recipe.

      Does this recipe freeze well?

        Very yummy! I had tried a different recipe for honey mustard chicken that was bland. This had good flavor!!! I did blend this a little with the other recipe I tried though. I added some cornstarch to the sauce once chicken was fully cooked to thicken the sauce, because I wanted to put it in sandwiches. I also made a purple cabbage slaw to go on the sandwiches. It was perfect!
