This easy gumbo recipe with chicken and sausage is perfect for busy weekdays or lazy weekends. With creole seasoning and traditional gumbo ingredients, this dish is bursting with authentic Cajun flavors that will transport you straight to New Orleans!

  • dark roux
  • white or yellow onion
  • fresh garlic
  • smoked sausage
  • chicken broth
  • white vinegar
  • cajun seasoning
  • rotisserie chicken
  • fresh or frozen okra

Creative variations to try

  • You can add in the holy trinity of onions, celery, green bell pepper and a bay leaf, instead of just using onions and okra. It's great both ways. 
  • If you like more spice in your Creole cooking, add more Cajun seasoning, a dash of cayenne pepper, or a splash of Tabasco sauce to make it spicier! 
  • Andouille sausage is traditionally used in gumbo; however, if you are not a fan of its spice, you can use regular smoked sausage instead. Diced ham or Tasso (cured pork) is another great addition.

  1. Add the dark roux, diced onion, minced garlic, smoked sausage coins, chicken broth, white vinegar and Cajun seasoning to the crock pot.
  2. Seal and cook on low for 4 hour).
  3. Next, add the rotisserie chicken and frozen okra. Increase the heat to high and cook for another 2 hours.

Frequently asked questions (FAQ’s)

Do you brown sausage before putting it in gumbo?

No, you don't need to brown the sausage before putting it in the gumbo. The sausage will be cooked in the slow cooker and will be tender and delicious when finished. 

Can you make Louisiana gumbo on the stovetop?

You can certainly make it on the stove. Use a good heavy-bottomed pot (like you'd make soup in). It will work great and be delicious!

What are the 2 rules of good gumbos?

The two rules of gumbo in cajun cooking are: to never use tomatoes and to never use store-bought roux. But, since you are making this in your house, feel free to make it however you desire.

Top Tip

When are you making the roux for the gumbo, make sure to use white flour (all purpose flour), this will allow you to get the best texture and flavor for this easy slow cooker gumbo. 

  • This recipe requires a dark brown roux. Continue cooking your roux until it is dark brown.Keep cooking and stirring it until a dark reddish brown roux forms. Click here for a refresher on how to make a roux for gumbo.
  • Not a fan of the slimy texture of okra? Use frozen, it has less slime than fresh. 
  • If you don't have a rotisserie chicken on hand, you can cook some chicken breast, or even skinless chicken thighs and shred those for this meal.

How to store leftovers

Refrigerate - Store leftovers in an airtight container in the fridge for 2-3 days.  One of the best things about gumbo if you ask me is that it tastes even better the next day. 

Freeze - Gumbo freezes well for up to 3 months. Thaw overnight in the refrigerator before reheating. 

Reheat - In a saucepan on medium heat, stirring occasionally until heated through, or microwave individual servings until hot.

It's traditionally served with a scoop of white rice. Most people prefer to use long-grain white rice to serve with gumbo. You can also use brown rice or wild rice if desired.  I prefer white rice. I think it has the best texture.

Ingredients

  • ¾ cup dark roux or ¾ cup oil, ¾ cup all-purpose rlour
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 pound smoked sausage sliced into coins
  • 8 cups chicken broth
  • 1 teaspoon white vinegar
  • 1 tablespoon cajun seasoning
  • 1 rotisserie chicken deboned and chopped
  • 1 pound frozen okra can also use one pound fresh okra, sliced

Instructions

  • Add the dark roux, diced onion, minced garlic, smoked sausage coins, chicken broth, white vinegar and Cajun seasoning to a 6 quart or bigger crock pot.
  • Cook on high for 2 hours (or low for 4 hours).
  • Add the deboned chicken and frozen okra and cook on high for another 2 hours.
  • Serve gumbo over rice.
