This Chicken Tater Tot Casserole is a great, hearty family meal that can be whipped up in no time. The combination of creamy chicken and potatoes makes for a comforting and delicious dinner that's perfect for busy weeknights.

  • cooked chicken
  • frozen vegetables
  • cream of chicken soup
  • cream of potato soup
  • cheddar cheese
  • pepper jack cheese
  • all purpose seasoning
  • frozen tater tots

Instructions

  1. Preheat oven to 350° degrees. Spray baking dish with nonstick cooking spray, set aside. 
  2. Add the chopped chicken, vegetables, soups, pepperjack cheese and the all purpose seasoning to a large mixing bowl.
  3. Mix well and spoon into the prepared casserole dish.
  4. Sprinkle half the cheddar cheese over the top of the mixture.
  5. Top with the tater tots, in one even layer.
  6. Bake in the oven for 35 minutes then sprinkle the remaining cheese over the top of the tater tots.
  7. Bake again for a further 5-10 minutes.

FAQ's

Should I bake this casserole uncovered or covered?

You want to make this casserole uncovered so that the tater tots on the top can crisp up. If you cover the casserole dish with aluminum foil you will be steaming them and they won't get crispy.

Can I use fresh vegetables?

Yes, absolutely. If using fresh vegetables make sure to cook them until tender before adding them to the casserole.

Can I make this ahead?

Yes, you can assemble this casserole and store it in the fridge wrapped in plastic wrap until you are ready to bake it.

What is the difference between a hot dish and a casserole?

There is no different, it's it just called different names in different regions on the United States.

Deb's tips

  • I've found that it's best to use freshly shredded cheese for casserole recipes like this one. It tends to melt better.
  • I like to use a ceramic or glass casserole dish for this recipe. A metal dish tends to burn.
  • This is a great way to use up leftover cooked chicken like rotisserie chicken.
  • Make sure that you place the tater tots in a single layer on top of the casserole before you bake it.
  • You can garnish this dish with fresh parsley or sliced green onions for a beautiful pop of color.

Variations

  • Switch out the all purpose seasoning for a packet of ranch mix if you want a little ranch flavor to your casserole.
  • Instead of using the cream soups listed you can switch them out and use nay type of cream soup like cream of mushroom soup, or even cream of celery soup.
  • If you don't have frozen veggies on hand, you can use a can of drained canned mixed vegetables.
  • You can switch out the cooked chicken for browned ground beef in this tasty recipe.
  • If your family is not a fan of spice, then you can use cheddar or Monterey jack cheeses instead of the pepper jack for this easy casserole.

Storage

Refrigerate - Store leftovers in an airtight container in the fridge for up to 4 days.

Freeze - This casserole does not freeze well, so it is best to eat within a few days.

Reheat - Reheat individual portions in the microwave or reheat the entire casserole dish in the oven preheated to 350° degrees for 15-20 minutes. If you find that your casserole has dried out a little bit, you can add a little chicken broth for extra moisture.
