Tater tots! Need I say more? This is one of my go-to meals when I grab a rotisserie chicken from Costco. You never use quite all of it and this is the perfect way to finish off the chicken.
Like the Cowboy Tater Tot Casserole the tater tots get nice and crispy in the oven. It's an easy recipe, cheesy and delicious!

- Preheat the oven, spray baking dish with nonstick cooking spray, set aside.
- Add the chopped chicken, vegetables, soups, pepperjack cheese and the all-purpose seasoning to a large mixing bowl. Stir to combine and spoon into the casserole dish.
- Sprinkle with half the cheddar cheese, top with the tater tots, in one even layer.
- Bake in until hot and bubbly, top with the remaining cheese and place back in the oven for another 5-10 minutes.

Chicken Tater Tot Casserole
Equipment
- 1 9x13 casserole
Ingredients
- 2 cups cooked chicken chopped
- 1 cup frozen vegetables
- 10.5 ounces can cream of chicken soup
- 14 ounces can cream of potato soup
- 8 ounces cheddar cheese grated - divided
- 8 ounces pepper jack cheese grated
- 2 teaspoons all purpose seasoning
- 1 pound frozen tater tots
Instructions
- Preheat oven to 350° degrees. Spray baking dish with nonstick cooking spray, set aside.
- Add the chopped chicken, vegetables, soups, pepperjack cheese and the all purpose seasoning to a large mixing bowl.
- Mix well and spoon into the prepared casserole dish.
- Sprinkle half the cheddar cheese over the top of the mixture.
- Top with the tater tots, in one even layer.
- Bake in the oven for 35 minutes then sprinkle the remaining cheese over the top of the tater tots.
- Bake again for a further 5-10 minutes.
