    If you're looking for an easy and delicious weeknight meal, look no further than this Buffalo Chicken Tater Tot Casserole! Filled with tender chicken in a cheesy sauce and topped with crispy tater tots. It's sure to please the whole family, even your picky eaters!

    • cooked chicken breast or a whole rotisserie chicken
    • cream of chicken soup - you can also use celery or cream of mushroom soup.
    • cream cheese - you can substitute sour cream, but I really prefer the flavor and cheesiness of the cream cheese.
    • Frank's Red Hot Buffalo Wing Sauce
    • evaporated milk 
    • shredded cheddar cheese 
    • ranch dressing mix
    • tater tots
    • melted butter

    Instructions

    1. Preheat oven to 375 degrees. Spray baking dish with nonstick cooking spray.
    2. In a large bowl add cream of chicken soup, cream cheese, evaporated milk, hot sauce and ranch dressing mix.
    3. Fold in chicken and shredded cheese.
    4. Pour chicken mixture into prepared casserole dish. Top with tater tots. 
    5. Brush tops of tater tots with melted butter.
    6. Bake uncovered for 25-30 minutes.
    7. Allow to sit for 5-10 minutes before serving. Garnish with thinly sliced green onions or diced celery.

    Yes, this dish freezes well for up to three months. For best results allow the casserole to thaw overnight in the refrigerator before baking.

    Yes, you can use your favorite kind of shredded cheese in this casserole.

    You can prep this casserole ahead by assembling the casserole, covering it with plastic wrap, and refrigerating for up to 24 hours.

    Do I need to thaw the tater tots?

    No, this dish uses frozen tater tots.

    Tips

    • Use any type of neutral or spicy seasoned chicken to make this casserole.
    • Don't skip the melted butter, adding the butter on top of the tater tots helps them crisp up.
    • You can tell this casserole is ready when the sauce is bubbling and the tater tots are crispy and golden brown.

    Variations

    • If you enjoy blue cheese, dot the top of the casserole with blue cheese crumbles before adding the tater tots - YUM! I haven't tried substituting blue cheese dressing, but it's next on my list!
    • Evaporated milk really gives this casserole its creamy flavor, but you can use regular milk in a pinch.
    • If you don't have ranch dressing mix on hand, you can use dry Italian seasoning mix instead.

    Storage

    Refrigerate - This casserole will keep for three days when stored in an airtight container or wrapped tightly with plastic wrap in the refrigerator.

    Freeze - Leftovers can be frozen up to three months.

    Reheat - this is best reheated in the oven. Thaw overnight in the refrigerator. Preheat oven to 375 degrees. Baked uncovered for 25-30 minutes.

    Ingredients

    • 5-6 cups cooked chicken diced
    • 10.5 ounce cream of chicken soup
    • 8 ounces cream cheese soften
    • 10 ounces evaporated milk
    • ⅓ cup Frank's Red Hot Sauce If you like spice add up to a ½ cup.
    • 1 cup shredded cheese
    • 1 packet ranch dressing mix
    • 28 ounce tater tots
    • 2 tablespoons butter

    Instructions

    • Preheat oven to 375 degrees. Prepare casserole dish by spraying with nonstick cooking spray.
    • In a large mixing bowl add cream of chicken soup, cream cheese, evaporated milk, hot sauce and ranch dressing mix. Whisk together well until creamy. You may have a few lumps in it, that's ok.
    • Fold in chicken and shredded cheese.
    • Spoon chicken mixture into prepared baking dish. Top with a single layer of tater tots.
    • Brush tops of tater tots with butter. This will help them really crisp up!
    • Bake uncovered for 25-30 minutes or until the casserole is hot and bubbly and the tots are crispy!
    • Allow to sit for 5-10 minutes before serving. Garnish with thinly sliced green onions or diced celery.

      Frank's red hot sauce is an ingredient, but it is no where in the directions. Does it go in on step no. 2???
