- Preheat oven to 350 degrees, spray baking dish with non stick cooking spray.
- Place chopped broccoli in a microwave-safe bowl. Pour ¼ cup water over the top. Cover with a damp paper towel and microwave on high 2 ½ to 3 minutes. Drain well.
- In a large mixing bowl add the mushroom soup, drained mushrooms (if using), mayonnaise, eggs, onions and cheddar cheese. Mix well to combine. Add the steamed broccoli and mix again. Spoon the broccoli mixture into the prepared baking dish.
- In a small mixing bowl, combine melted butter, crushed crackers and parmesan cheese. Sprinkle the buttery crackers over the top of the casserole.
- Bake for 35-40 minutes until the casserole is set and the top is golden brown.

The broccoli in this casserole is first steamed in the microwave. This helps to cook it and also to remove some of the moisture so that the casserole isn't watery.
I like to cut the broccoli into small, bite-sized pieces. Try to keep your pieces evenly sized.
It is always a good idea to wash your broccoli before cooking it. I like to rinse mine in a colander and then let it sit in a bowl of cold water for a few minutes to let any dirt or sand settle to the bottom of the bowl.

- Add more flavor to this creamy sauce by adding garlic powder, onion powder, black pepper, and kosher salt.
Storage
Refrigerate - Store leftovers of this classic broccoli casserole in an airtight container for up to three days.
Freezer - This casserole can be wrapped in plastic wrap and aluminum foil and then frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat - This broccoli casserole can be reheated in a 350 degree oven until heated through. About 15 to 20 minutes.

Ingredients
- 6-8 cups fresh broccoli about three large heads
- ¼ cup water
- 10.5 ounces cream of mushroom soup
- 6.5 ounce canned mushrooms drained (optional)
- 1 cup mayonnaise
- 2 large eggs
- ¼ cup minced onions
- 1 cup freshly grated sharp cheddar cheese
- ¼ cup grated parmesan cheese optional
- 1 cup ritz cracker crackers crushed
- 2 tablespoons butter melted.

I will say I feel like using Ritz really takes this broccoli casserole to the next level. Sometimes when there's not as much of a crunchy topping I feel like there's something missing, so this recipe is perfect!
