Instructions

- Slice your cooled baked potato lengthwise.
- Using a scoop or a spoon, scoop the potato meat out of the skin. Be careful not to rip the skin.
- Place the potato flesh in a large mixing bowl.
- Add the Ranch dressing, salt, pepper, and sour cream. Mix until combined.
- Add the melted butter, bacon bits, chopped onions, and shredded cheese.
- Mix until all ingredients are incorporated.
- Using a spoon, stuff the mashed potato filling into all the potato halves.
- Sprinkle cheese and bacon bits on top.
- Place the stuffed potatoes in the air fryer in a single layer.
- Cook manual setting at 350 degrees F. Air fry for 8 to 10 minutes or until the cheese is nice and melted and the potato is warm.
Reheating from frozen
- Preheat the air fryer, manual setting at 375 degrees F.
- To reheat from frozen, remove them from the freezer, unwrap them, and place them in a new foil wrap.
- Place in the air fryer at 350 degrees F for 20 minutes (they should be nice and thawed).
- Unwrap them and add toppings (shredded cheese and bacon bits) and continue cooking until nice and melted. 10-15 minutes

FAQ's
Yes, it is possible to overcook a baked potato in the air fryer. Be sure to check on your potatoes every few minutes to ensure they don't get too crispy.
The potatoes are called twice-baked because they are first baked until they are tender, then mashed and mixed with other ingredients, and then “baked” again in the air fryer.
I only recommend wrapping the potatoes in foil if you are air frying frozen potatoes.
Things to know
- Russet potatoes are the best potatoes to use for twice-baked potatoes because they give fluffy potatoes and crispy potato skins when cooked.
- If you are using jumbo potatoes you will need to increase the cooking time by a few minutes to adjust for the larger potatoes.
- Spraying the air fryer basket with nonstick cooking spray or lining it with aluminum foil for easy clean up.
- When filling the potato shells with potato flesh mixture, mound it a little on the top so it looks pretty.
- If you want an extra smooth mashed potato filling you can use a potato masher or a hand mixer to get the insides of the potatoes completely smooth.
- Place the potato halves in a single layer in the air fryer so that they cook evenly. Depending on the size of your air fryer you may need to cook the twice-baked potato recipe in batches.
Variations
- Do you like a little spice with your potatoes? You can use pepper jack cheese, or add some crushed red pepper flakes to your filling.
- Want to add some protein to serve this as a main dish? Add some cooked ground beef, cooked shrimp, or even pulled pork to the potato mixture before you add it back to the potato skins.
- Not a fan of onion? You can leave them out altogether or use a teaspoon of onion powder if you still want the flavor without actually using onions.
- Instead of Colby jack cheese, you can also use cheddar cheese or your favorite shredded cheese for this recipe. Cream cheese is delicious as well,
- Top these potatoes with your favorite toppings, like tangy sour cream, more cheese, green onions, chives, fresh herbs, or a sprinkle of fresh Parmigiano cheese.
Storage
Refrigerate - Store in an airtight container for up to 3 days in the fridge.
Freezer - Or you can individually wrap them and store them in the freezer for 45 days. Thaw in the fridge overnight before reheating.
Reheat - If they already have their toppings, place on the counter for 10 minutes. And, then place in the air fryer at 375 degrees F and warm up to 8 to 12 minutes or until nice and warm in the center.
If they don’t have the toppings, air fry at 375 degrees F for 5 minutes. If they are nice and warm to the touch, place the toppings on the potatoes. Air Fryer at 375 degrees for an additional 8 to 10 minutes or until the toppings are nice and melted.

Air Fryer Twice Baked Potatoes
Ingredients
- 2 baked potatoes cooled
- 1 tablespoon ranch dressing
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- ½ cup sour cream
- 3 tablespoons melted butter
- ½ cup bacon bits
- ½ cup chopped onions
- 1 cup shredded Colby Jack cheese
Instructions
- Slice your cooled baked potato lengthwise.

Notes
Note:
Topping with cheese at the beginning and cooking for 8 to 10 minutes, makes the cheese melted and golden. If you prefer the cheese not to be too golden, like a pizza, cook the potato for 5 to 6 minutes then add the cheese and bacon bits. This way the cheese just started to melt and depending on the cheese you use it may be more stringy.Freezer:
- Fill the potato skin, do not add the toppings. Place them on a plate or if you have a big freezer and need to freeze a lot of potatoes place them on a cookie sheet. Make sure there is enough space in between them so they freeze individually. You can even put a silicone mat or parchment paper on the cookie sheet so it is easier to take them off once they are frozen.
- Freeze for 30 to 60 minutes. Why do I freeze them individually first? So when I put them in the foil wrap they are not sticking or any moisture is created between the foil and the potato. So when I unwrap the foil is easier to remove.
- Once frozen, you can wrap them individually in foil or plastic wrap. Place in a freezer-safe container or ziplock bag
- They can be frozen for up to 45 days for optimum flavor.
- To re-heat thawed potatoes: Place them overnight in the fridge. Make sure to unwrap them, place them on a plate or I like to put them on a rack so they don’t sit in moisture.
- Place in the air fryer unwrapped at 375 degrees F on manual setting. Bake for 10 minutes or until internal temperature is about 90 degrees F. Add toppings and continue cooking for an additional 10 minutes or until they are nice and golden.
- To reheat frozen potatoes, remove from freezer, unwrap them and place in a new foil wrap. Place in the air fryer at 350 degrees F for 20 minutes .
- Unwrap them, place your toppings (shredded cheese and bacon bits) and continue cooking until nice and melted. Air Fryer, manual setting at 375 degrees F for 10 to 15 minutes.
