Low Sugar Strawberry Freezer Jam

This Low Sugar Strawberry Freezer Jam recipe is so easy to make and it is perfect for those who are looking for a delicious jam that is not too sweet. This jam sets up quickly and easily, and it is a great way to enjoy strawberries all year long.

Ingredients

  • fresh strawberries
  • pure cane sugar
  • Sure-jell low sugar powder pectin box (that's the pink box).

Instructions 

A heavy black pot filled with berries getting mashed to make a strawberry preserves recipe.
Mash the berries up really well. I use an old potato masher - might be 50 years old, but it works just great!

This is an overview of the instructions for this great jam! For the complete directions just scroll down to the bottom!

  1. Clean the berries. Remove the stems, mash strawberries, and measure out exactly 4 cups of fruit.
  2. Measure the exact amount of sugar into a large pot. Add the pectin and whisk together.
  3. Add crushed strawberries, pectin sugar mixture to a large pot. Bring to a boil over high heat.
  4. Boil for exactly one minute - a hard boil you can't stir down.
  5. Remove from heat, ladle the hot pectin mixture immediately into the freezer container, leaving ½ inch headspace for expansion at the top. 
  6. Let stand at room temperature for 24 hours before refrigerating or freezing.

FAQ's

Why do you mash the berries?

The reason you mash the berries as opposed to dicing them is because it releases the juices in the berries.

Will my jam set with less sugar?

Do not change the amount of sugar. Add the amount of sugar the recipe calls for or it may not set up correctly.

Can I substitute honey for sugar in freezer jam?

No, I don't recommend substituting honey in this recipe, as it can affect how the jam sets up.

Can I use regular pectin for low sugar jam?

No, you need to use the low sugar pectin to make sure this freezer jam sets up correctly.

Things to know

If you've never made jam before, read through the full recipe and instructions before beginning and check out my post on How to Make Jam.

  • If you want to make extra, don't double the batch. Make two separate batches of jam. For some reason doubling changes the chemical make-up of the recipe.
  • Do not use a food processor to mash the berries, use a potato masher.
  • Allow the jam to cool completely before freezing. Leave a little space in the top of the container for expansion.
  • I prefer to storer freezer jam in a plastic container rather than glass. When the jam freezes it expands. It can shatter the glass if you don't leave enough room for expansion!
  • Use fresh fruit, old fruit or fruit that's past it's prime doesn't make the best fruit.

Variations

  • It's important to follow the instructions. Adding less sugar can keep the jam from setting. Adding more fruit can do the same thing!
  • Though it's tempting to substitute a no calorie sweetener, don't substitute. It may not set up.

Storage

Storage containers - Use clean plastic containers or small mason jars to store the jam.

Refrigerate - This jam will last for 3 to 4 weeks in the fridge in an airtight container.

Freezer - As the name says, this jam is made for the freezer. It can be stored frozen for up three months.

Heat - If you like warm jam, you can heat it up in the microwave for about 30 seconds before serving. Then it's perfect for drizzling over pancakes and waffles!

  • 1 3 oz. Sure-jell low sugar pectin pink box, powder pectin

Notes

Be sure to leave ½ inch for expansion in each container. The cold from the freezer will expand the ingredients inside the container. If you're using glass it will shatter the jar.

      I made this today—much better than the no cook variety.
      The only thing I added was about 1/4 cup of lemon juice(out of the bottle). Thanks for sharing
