What you’ll need: ingredients

Please refer to the printable recipe card at the bottom of this post for the exact measurements.

  • macaroni pasta - Elbow macaroni noodles are my favorite shape to use in salads like this, but you can use any small pasta.
  • olive oil
  • Montreal steak seasoning
  • large hardboiled eggs
  • yellow onion
  • mayonnaise
  • yellow mustard
  • salt and pepper
  • Garnishes include: parsley, green onions, and/or paprika - all optional, all delicious!

Creative variations to try

  • Do you prefer the taste of red onion? A red onion would also work well in this recipe since they are great eating raw.
  • Chopped dill pickles or dill pickles relish would add a nice tang to this cold salad.
  • Sometimes I like to add a dash of cayenne pepper or crushed red pepper flakes for a little heat.
  • Greek yogurt or sour cream can be a creamy swap for the mayo in this salad.
  • For a little crunch, you can add some diced bell peppers, or celery to your salad.

Step-by-step guide: instructions

This is an overview of the instructions. For complete directions, scroll down to the bottom.

Cooked macaroni in a bowl being seasoned with Montreal steak seasoning.

Step 1 - Cook the pasta to al dente in a large pot of boiling water, drain well. Drizzle with olive and seasoning with steak seasoning. Cool and refrigerate.

Step 2 - Boil the eggs, cool and refrigerate as well. When cool, peel and dice the eggs.

Mayonnaise and mustard in a bowl being whisked together until it is lusciously creamy.

Step 3 - Mix together the mayonnaise and mustard.

A large bowl filled with pasta and chopped eggs. Onions are added to the bowl, then a creamy sauce. Finally the pasta salad is stirred together combining the sauce and ingredients.

Step 4 - Add the eggs and diced onions to the bowl. Then add the creamy sauce. Combine it with the pasta, and mix well. Taste the salad, and season (if needed!).

Garnish the top of the salad with thinly sliced green onions, a sprinkle of paprika or minced parsley.

Deb's tips for the perfect dish

Cook the pasta according to the package directions and to suit your tastes. I like cooked pasta that is slightly above al dente for pasta salads.

  • Don't forget to salt your pasta water, trust me it really does add some nice flavor to your pasta.
  • I like to use this Air Fryer Hard Boiled Eggs recipe to make the eggs for this great side dish.
  • Be sure to check the seasonings after everything is mixed together. You may need a touch more mustard, salt or pepper.

How to store leftovers

Refrigerate - Store leftovers in an airtight container in the fridge for 2-3 days. Do not freeze leftovers.

  • 1 pound macaroni pasta
  • 1 tablespoon olive oil
  • 1 ½ teaspoon Montreal steak seasoning
  • 9 large eggs
  • 1 sweet yellow onion diced
  • 1 - 1 ½ cups mayonnaise
  • ¼ cup yellow mustard
  • ½ teaspoon each kosher salt and black pepper optional
  • 2 teaspoons minced parsley, thinly sliced green onion, and/or ½ teaspoon paprika optional garnish

Instructions

  • Bring a large pot of water to a boil on the stove. Season with 1 tablespoon of salt. Add the macaroni pasta and cook to al dente. Drain well and place in a large mixing bowl. Drizzle with olive and seasoning with steak seasoning. *
  • Boil the eggs, allow to cool and refrigerate. *
  • When you're ready to build the salad, peel the eggs and dice them. Add to the bowl with the pasta along with the diced onions.
  • In a small bowl, mix together the mayonnaise and mustard. Add it to the bowl with the pasta, and combine all the ingredients and mix well. Taste the salad, and if you feel need more salt and pepper, add them. Mix it again and taste test!

Notes

*Allow the pasta and eggs to cool completely. (I usually make both the day before and refrigerate overnight after they have cooled to room temperature.)

This looks great. I love egg salad and pasta salads. Never thought of combining them into one salad. I'm going to try this and will let you know what I thought. Would probably be great as a side dish with baked ham.

Yes it would! It's also great with bbq - ribs, burgers, etc. It's always gone when I take it to potlucks. Enjoy Sue!
