- Spray the inside of the crockpot with nonstick cooking spray. Set aside.
- Add the two boxes of stuffing mix to a large mixing bowl. Add the chicken broth and melted butter. Mix to combine. Now add the frozen vegetables and mix those in as well. Spoon the mixture into the prepared slow cooker bowl.
- Add the chicken thighs to a large bowl or a large ziplock bag. Toss with the olive oil until all the thighs are lightly coated. Sprinkle with the chicken seasoning.
- Place the chicken thighs on top of the stuffing mix. Sprinkle with the paprika. Secure the lid on cook on low for 8-10 hours.

FAQ's
No, you don't have to brown the chicken before adding it to the slow cooker. Add the raw chicken on top of the stuffing and let it cook.
The chicken does get more tender as it cooks however it can easily overcook and become tough, so make sure that you check it for doneness at the 8-hour mark so it doesn't overcook.
I like to use the chicken dry stuffing mix, but you could also use sage, cornbread, or even turkey stuffing.
Test kitchen tips
- Want easy cleanup? Use a slow cooker liner instead of spraying your crock with cooking spray.
- Make sure that you lay your chicken thighs in a single layer on top of the stuffing so that
- If you have a newer crock pot they tend to cook a little hotter and faster than the older models, so check for doneness of the chicken around the 5-6 hour mark so that they don't overcook.
- You know the chicken is finished cooking when it reaches an internal temperature of 165 degrees f in the thickest part of the thigh.
- A sprinkle of fresh parsley or even a dollop of sour cream makes a great garnish for this easy recipe.
Variations
- Do you prefer white meat instead of chicken thighs? If so, swap out the chicken thighs for boneless skinless chicken breasts instead.
- For a little extra flavor, you can add a slice of Swiss cheese on top of the chicken in the last 10-15 minutes of the cooking time. (This is a great flavor boost!)
- Not a fan of mixed vegetables? You can use a different vegetable, such as frozen green beans for this easy slow cooker chicken recipe.
- Feel free to get creative with the seasoning for your chicken, poultry seasoning, garlic powder, onion powder, or your favorite all purpose seasoning will work great for this simple recipe.
- Want to change up the protein? You can use turkey tenderloin or even a few pork chops for this recipe.
Storage
Refrigerate - Store leftover crockpot chicken in an airtight container in the fridge for 2-3 days.
Freezer - Cooked chicken can also be frozen for up to 2-3 months. Just make sure to cool it completely before freezing in an airtight container or bag.
Reheat - Reheat the entire dish in a casserole dish in a 350 degree preheated oven for 15-20 minutes or individual servings can be reheated in the microwave for 1-2 minutes. If you find that your stuffing is drying out, add a small splash of chicken broth or water to moisten it back up.
