Some recipes just feel like a warm hug at the end of the day and for me, slow cooker chicken and stuffing is that recipe! The first time I made it, I was desperate for an easy crockpot dinner and didn't want to go to the store before I left for the store.
Luckily I found everything I needed in the pantry, fridge and freezer!
When I got home at the end of the day, the whole house smelled so amazing. Like a holiday dinner, without all the fuss. So who's to say you can't enjoy this all year long? We do!

- Stove Top stuffing mix or your favorite pre-made stuffing mix.
- Frozen vegetables are great for this recipe. If you prefer, use a different vegetable, such as frozen green beans for this easy slow cooker chicken recipe.
- Chicken thighs or bonless chicken breasts.
- Chicken seasoning or season-all seasoning.
Creative variations to try
- For a little extra flavor, you can add a slice of Swiss cheese on top of the chicken in the last 10-15 minutes of the cooking time. (This is a great flavor boost!)
- Feel free to get creative with the seasoning for your chicken, poultry seasoning, garlic powder, onion powder, or your favorite all purpose seasoning will work great for this simple recipe.
- Want to change up the protein? You can use turkey tenderloin or even a few pork chops for this recipe.

- Combine the stuffing mix, stock, butter and frozen vegetables. Mix well and spoon into the bottom of the prepared crockpot vessel.
- Season the chicken well and lay it on top of the stuffing mix. Finish by sprinkling the top of the chicken with paprika, seal and cook as directed.

This recipe does not require you to brown the chicken. Having said that, browning it will add another layer of flavor!
Yes, slow cooker is a great way to cook chicken. It will help the chicken tenderize. It's better to cook on low (rather than high) in the crockpot. Chicken is done when the internal temperature is 165 degrees.
I like to use the chicken dry stuffing mix, but you could also use sage, cornbread, or even turkey stuffing.

Want easy cleanup? Use a slow cooker liner instead of spraying your crock with cooking spray.
- If you have a newer crock pot they tend to cook a little hotter and faster than the older models, so check for doneness of the chicken around the 5-6 hour mark so that they don't overcook.
- A sprinkle of fresh parsley or even a dollop of sour cream makes a great garnish for this easy recipe.
How to store leftovers
Refrigerate - Store leftover crockpot chicken in an airtight container in the fridge for 2-3 days.
Freezer - Cooked chicken can also be frozen for up to 2-3 months. Just make sure to cool it completely before freezing in an airtight container or bag.
Reheat - Reheat the entire dish in a casserole dish in a 350 degree preheated oven for 15-20 minutes or individual servings can be reheated in the microwave for 1-2 minutes. If you find that your stuffing is drying out, add a small splash of chicken broth or water to moisten it back up.

Crockpot Chicken and Stuffing
Equipment
- Slow Cooker
Ingredients
- 12 ounces Stove top stuffing mix
- 1 ½ cups chicken stock
- ¼ cup melted butter
- 10 ounces frozen vegetables
- 1 tablespoon olive oil
- 8-10 skinless chicken thighs
- 1 ½ tablespoons chicken seasoning
- 1 teaspoon paprika
Instructions
- Spray the inside of the crockpot with nonstick cooking spray. Set aside.
- Add the two boxes of stuffing mix to a large mixing bowl. Add the chicken broth and melted butter. Mix to combine. Now add the frozen vegetables and mix those in as well. Spoon the mixture into the prepared slow cooker bowl.
- Add the chicken thighs to a large bowl or a large ziplock bag. Toss with the olive oil until all the thighs are lightly coated. Sprinkle with the chicken seasoning.
- Place the chicken thighs on top of the stuffing mix. Sprinkle the top of the chicken with the paprika. Secure the lid and cook on low for 8-10 hours.
