This Shrimp Chop Suey Recipe is a delicious and easy-to-make dish that is perfect for any occasion. Made with juicy shrimp, vegetables, and a savory sauce, this dish is sure to please everyone!

Ingredients

  • large shrimp - you can also substitute chicken breast if you'd prefer.
  • all-purpose seasoning
  • vegetable oil
  • fresh vegetables - I used a packet of stir fry vegetables, use your favorites
  • white mushrooms
  • baby corn or young corn
  • kung pao stir fry sauce or chop suey sauce

Instructions

  1. Wash and pat dry the shrimp with a paper towel. Season with the all purpose seasoning and allow to sit for 10 minutes.
  2. Add the vegetable oil to a large skillet over high heat.
  3. Add the shrimp and cook in batches. Sear the the shrimp for 2 minutes each side then remove to the side and continue with another batch.
  4. Once all the shrimp has been cooked add the vegetables to the same skillet and sweat down for 5 minutes.
  5. Next add the baby corn and mushrooms and cook a further 5 minutes on high, stirring often.
  6. Place the shrimp back in the skillet along with the stir fry sauce. Toss to combine and heat through.
  7. Serve over rice.

What does chop suey consist of?

Chop suey is a Chinese-American dish consisting of key ingredients like stir fried vegetables, proteins, and sauce.

What is the difference between chow mein & chop suey?

The main difference between chow mein is made with noodles, and chop suey is protein, vegetables and sauce.

What is the meaning of chop suey?

The literal translation of chop suey is "mixed bits". It refers to the combination of ingredients in this dish.

Deb's tips

  • If you are using frozen shrimp make sure to thaw them first. Blot dray with a paper towel so that you can get them nice and dry for a great sear.
  • Make sure to cook the vegetables until they are just tender-crisp. Don't overcook the veggies!
  • This dish can be served with noodles, white rice, or your favorite grain.
  • I like to garnish this dish with sliced green onions, sesame seeds, or even a sprinkle of red pepper flakes.

Variations

  • You could use different types of protein such as chicken breasts or beef.
  • You can also add a variety of vegetables such as red bell peppers, zucchini, snow peas, bean sprouts, bamboo shoots water chestnuts, bok choy, or edamame.
  • Swap out the Kung Pao sauce for your favorite stir fry sauce like oyster sauce, or hoisin sauce.
  • Top with some chopped peanuts to add even more flavor and crunch.
  • Add a touch of heat to this skillet meal by sprinkling with red pepper flakes or cayenne pepper.
  • If you want to add a little more flavor to this flavorful sauce you can add in soy sauce or a splash of sesame oil.

Storage

Refrigerate - Store leftovers in an airtight container for up to 3 days.

Reheat - To reheat, add a splash of chicken broth or water to thin the thickened sauce and heat in the microwave for 2 minutes, stirring halfway through. Alternatively, you can also reheat in a skillet over medium heat until warmed through.

Freeze - If you used fresh instead of frozen shrimp then this dish can be frozen for up to 3 months. To freeze, transfer the cooled leftovers to an airtight container and store in the freezer. Thaw overnight in the refrigerator, then reheat as directed above.

Ingredients

  • 1 pound large shrimp peeled and deveined
  • 2 teaspoons all purpose seasoning
  • 1 tablespoon vegetable oil
  • 12 ounce fresh stir fry vegetables
  • 1 cup sliced white mushrooms
  • 15 ounce can baby corn drained
  • ⅓ cup kung pao stir fry sauce
