- In the same skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent and fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to deglaze and pick up any browned bits. Let the broth simmer for a couple of minutes to reduce slightly.
- Lower the heat and stir in the heavy cream, grated Parmesan cheese, Italian seasoning, and red pepper flakes. Stir continuously until the sauce becomes creamy and well combined. Simmer for 2-3 minutes to allow the flavors to meld.
- Add the halved cherry tomatoes to the sauce, and let them simmer for an additional 2-3 minutes until they slightly soften.
- Return the cooked chicken breasts to the skillet, nestling them into the sauce. Simmer for another 2-3 minutes to let the chicken absorb some of the creamy goodness.

Test kitchen tips
- Make sure that your skillet is hot before you start to sear this chicken. This prevents the chicken from becoming tough and gives you a nice crust on the outside.
- Use a wooden spoon or spatula to scrape the bottom of the pan well. You want to get the brown bits into your sauce for the flavor.
- If you are on a low carb diet you can serve this delicious chicken recipe over a bed of cauliflower rice.
- The cooking time may vary based on the thickness of your piece of chicken. You can save a little time by using thin chicken breasts.
Variations
- Feel free to swap out the Italian seasoning for your favorite fresh herbs, fresh thyme, and rosemary will blend so well into this parmesan cream sauce.
- Spinach and sundried tomatoes are great additions. Add it to the creamy sauce when you add the chicken back in.
- Add some extra flavor to the delicious sauce by swapping out the chicken broth for white wine.
- Instead of fresh cherry tomatoes, you can use sun-dried tomatoes if you prefer the flavor of those.
Storage
Refrigerate - Store leftover chicken in an airtight container for 2-3 days.
Freezer - Due to the dairy in the creamy sauce I recommend that you do not freeze this.
Reheat - You can reheat the chicken in the microwave on 50% power for 1-2 minutes or until warm all the way through. However, my favorite way to reheat it is in a skillet over medium-low heat until it is completely warm.
