Are you looking for a quick and easy recipe to make before trick-or-treating? How about serving up these yummy Halloween Tacos? Every kid (big and small) will enjoy every crunchy bite!

Halloween tacos

Anytime you blend spooky fun with bold flavors, it's a hit! And who doesn't love a great taco? With bold Tex-Mex flavors and festive toppings this easy dinner is customizable for all ages!

All of the ingredients needed to make the tacos. With print overlay for clarification.

What you’ll need: ingredients

Please refer to the printable recipe card at the bottom of this post for the exact measurements. 

  • Ground beef, ground turkey or ground chicken.
  • salsa or tomato sauce
  • water
  • a packet of taco seasoning mix
  • crispy taco shells
  • lettuce
  • Cheddar cheese, pepper jack cheese or a Mexican blend of shredded cheese.
  • sour cream
  • Green olives with pimentos or black olives if you'd prefer.

Frightful variations

Stretch the taco meat by adding refried beans to the meat or serve them on the side. That is always delicious.

It would be easy to make spiders with olives to decorate the top of the tacos as well. Wouldn't that be fun?!!

Instructions for the spooky eyeball tacos

This is an overview of the instructions. For complete directions, scroll down to the bottom.

  1. Brown the ground beef. Cook until no longer pink, drain well.
  2. Season the cooked beef with ½ cup salsa, water, and the taco seasoning mix.
  3. Bring to a boil and then reduce heat to medium and simmer for 5 minutes.
  4. Build the tacos! Starting with taco meat, then add lettuce, cheese and salsa. Place two large dollops of sour cream on the top of each taco. Then top with a sliced olive.

What taco fillings are best for a party?

You can vary the filling, using ground turkey or chicken instead of beef. For vegetarian taco, roast cubed sweet potatoes, mixed with black beans and seasoned with taco seasoning.

Can I make these tacos ahead of time?

You can prepare the meat and fixin's ahead of time. Set out the ingredients for assembly when it's time to eat.

What are some fun topping ideas for Halloween tacos?

Adding fun names to the toppings, like blood-red salsa and ghost guacamole, would be super fun! Using a cookie cutter, you can slice ghosts out of sliced cheese or tortillas. That would be super fun too!

Deb's tips for the perfect dish

Drain excess grease well. Nobody likes greasy tacos! Plus it will keep the bottom of the tacos from getting too soggy

  • Additionally placing a lettuce leaf on the bottom of the taco BEFORE adding meat will help keep it from getting soggy as well.

How to store leftovers

Refrigerate—Refrigerate any leftover taco meat and fixings. They will last up to three days in the refrigerator. As will any leftover shredded cheese or lettuce.

Freezer - Leftovers freeze great! Allo the taco meat to cool completely and store it in an airtight container. Freeze up to 3 months. Be sure to label your container before putting it into the deep freeze.

Reheat - on the stovetop or in the microwave.

Ingredients

  • 1 ½ pounds ground beef
  • 1 ½ cups salsa divided
  • ¼ cup water
  • 1 ounce packet taco seasoning mix
  • 8 crispy taco shells
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 16 green olives with pimentos sliced in half

Instructions

  • In a large skillet over medium-high heat, brown the ground beef. Crumbling the meat into up into small chunks. Cook until no longer pink.
  • Drain any excess grease. Add ½ cup salsa, water, and the taco spice mix. Bring to a boil and then reduce heat to medium and simmer for 5 minutes.
  • Now it's time to build the tacos! Start with a layer of taco meat, then lettuce, cheese and salsa. Place two large dollops of sour cream on each taco. Then top with a sliced olive. And just like that... Walla! You have fun Halloween tacos!
  • Repeat, serve and enjoy!
