You’ve heard me talk a lot about my family – as I’ve mentioned in the past, my Dad is a diabetic, as are a couple Aunts, Uncles and my cousin too – it’s a deadly disease that is difficult to manage. Whenever my folks come to visit I cook specifically to address my Dad’s dietary needs. Yes, we throw in some treats here and there, but I’ve learned from my Dad that it’s all about management. Eating at the same time daily, rarely indulging in sweets, and regular exercise. He also carefully reads labels and watches portion sizes – without a doubt he is the most disciplined person I’ve known!

The Golden Lentil Soup I’m sharing today is another great choice for a delicious wholesome meal. It also only takes 30 minutes to make and at the end of the day though when you’re tired, it’s always good to have a simple go-to meal that you can enjoy in a snap! The flavors are bright and warm with cumin and coriander and chili powder and with a quick chop of celery, carrots and onion – you’ll have dinner or lunch together in no time. Finish at the end with a squeeze of fresh lemon juice and it’s a delicious soup and definitely one of my family’s favorites!
Start by chopping & dicing the onion, carrot & celery and sauté the vegetables in a tablespoon of olive oil. You’ll only need to sauté them about 5 minutes – then add all of the spices, stir everything together well and next add the broth & water.Bring this to a boil and then reduce the heat and simmer for about 15 minutes stirring occasionally.
It won’t take long and the soup will be ready! Remove it from the heat and stir in a fresh squeeze of lemon – adding it at the end brightens the flavors and takes this soup right over the top. You won’t find an easier and more delicious lentil soup!
More delicious Lentil Soup
Golden Lentil Soup
- 1 cup dried orange lentils
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 4 cups chicken stock can substitute vegetable stock
- 1 cup water
- 2 teaspoon cumin
- 1 teaspoon chili powder
- 1 1/2 teaspoon salt
- 1 teaspoon coriander
- 1/2 teaspoon tumeric
- 1/4 teaspoon curry
- 1 tablespoon olive oil
- 1/2 lemon optional
- Begin by dicing the onion, carrots and celery. Heat a heavy stock pan over medium heat. Add the olive oil and next the vegetables. Sauté for 4-5 minutes until they just begin to soften.
- Next add the spices. Stir them in and mix well with the vegetables - add the lentils and sauté for another minute and add the stock & water. Increase the heat to high and bring to a boil, reduce to medium low and continue to simmer the soup, stirring occasionally. It will take about another 15 minutes until the lentils are completely cooked.
- When the lentils are cooked, remove from the heat and finish by squeezing the juice of half a lemon into the soup, stir to combine and serve.
