Ingredients

  • 3-4 skinless boneless chicken breasts You can use white meat chicken or boneless skinless chicken thighs.
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 .87 ounce packets of chicken gravy mix packets
  • 1 10.5 ounce can cream of chicken soup
  • 14.5 ounce can of chicken broth
  • 2 teaspoons dijon mustard optional

Instructions

  • Prepare the crockpot by spraying with nonstick cooking spray.
  • Season the chicken with garlic powder, salt, and pepper, and place the chicken breast in the crockpot.
  • In a small bowl combine the cream of chicken soup, gravy seasoning mix, chicken broth and mustard (if using!) until completely smooth. Pour over the chicken.
  • Seal the crockpot and cook on low for 6-8 hours.
  • When the chicken is tender and cooked, remove and shred with two forks. Return it to the chicken to the slow cooker. Mix everything together well.
  • Serve with the flavorful gravy over cooked rice, noodles or mashed potatoes, enjoy!

Notes

The easiest way to shred the chicken is with a handheld mix on low. Takes about two minutes for an easy mess-free method! Be sure to keep it on low though, if you turn the mixer any higher though be prepared for a spluttery mess!
The dijon mustard adds a little depth of flavor to the gravy to make it extra delicious. I highly recommend it!
If you prefer a thicker gravy, make a slurry using one tablespoon cornstarch and one tablespoon COLD water. Whisk until combined, pour into crockpot and mix well. Allow the mixture to cook for another 30 minutes before serving.
Storage Refrigerate leftovers in an airtight container. It will keep in the refrigerator for 3-4 days. Freeze up to three months.

Yes you cook on high for four hours. I think it's more tender cooking on low, but that works when you're short on time!

I've used cooked chicken, I'm sure it would effect the cooking time, but I can't tell you exactly what that is. If you do decide to use cooked chicken, I'd cook it on low for 3-4 hours. Let me know how it turns out for you. Enjoy the recipe!

I always thaw the meat before adding to the crockpot. I checked the USDA site just to be sure and that's their recommendation as well. Just allow it to thaw in the refrigerator overnight for the best result.
