Instructions

- Cook pasta according to package directions to al dente.
- While the pasta is cooking, shred or cube the rotisserie chicken.
- Pre heat oven to 350 degrees F. Prepare the casserole dish, and set aside.
- Spread the shredded chicken evenly in the 9 x 13 casserole.
- Add the cooked/drained pasta over the chicken.
- Pour marinara sauce and slightly mix to coat the pasta. (If you prefer you can place the cooked pasta into the Marinara sauce and mix to combine. Once the pasta is all coated, pour over the chicken and spread evenly).
- Sprinkle 1 cup of shredded cheese over the pasta, then the garlic and onion powder.
- Evenly sprinkle the panko bread crumbs evenly over the pasta, top with the remainder of the shredded mozzarella. Finish by adding the parmesan cheese.
- Bake in a preheated oven for 25 to 28 minutes or until it is nice and golden brown.

There is no difference between these two recipes, they are the same thing just different names.
Close! Though the ingredients are similar, the difference is that in order to get the name Parmigiano it must come from Italy.
For this casserole, I recommend that you bake this casserole uncovered so that the cheese can brown slightly.
Deb's tips
- Be sure to spray your casserole dish really well with no-stick cooking spray, or grease it with butter or shortening so that the casserole doesn't stick.
- I like to shred the cheese from a block as I found out they melt easier. You can use pre-shredded cheese but you may not get as much cheese melt.
- If you don't have marinara sauce on hand, you can swap it out for a jar of your favorite pasta sauce.
- Fresh basil or fresh parsley will make a great garnish for this easy chicken parmesan casserole recipe.
- Plus, don't forget some freshly grated parmesan cheese for even more flavor. You can never have too much cheese.
- Once you add the mozzarella cheese, you can sprinkle a little more parmesan cheese on top of the casserole.
Variations
- Add some spice to this casserole by adding some crushed red pepper flakes or a pinch of cayenne pepper to the sauce.
- Instead of a marinara sauce use a fire-roasted or Arrabiata sauce.
- You can use any shape of pasta that you have on hand, I like to use penne pasta or rotini but any small shapes will work just fine in this casserole.
- Instead of rotisserie chicken, you can use any type of leftover chicken that is neutral or Italian flavored.
Storage
Refrigerate - Store leftovers in an airtight container and refrigerated will last up to 4 days.
Freezer - This is a great freezer meal. Make sure to wrap it tightly in aluminum foil to protect the casserole from freezer burn. Store no longer than 3 months.
Reheat - To reheat the casserole, thaw it overnight in the refrigerator. Place on a baking sheet covered with aluminum foil and bake at 350 degrees F for 20-25 minutes or until hot and bubbly. Or reheat single servings in the microwave for one to two minutes.

Chicken Parmesan Casserole
Ingredients
- 2 tablespoons olive oil
- 1 rotisserie chicken
- 10 ounces Rigatoni pasta cooked
- 24 ounce marinara sauce
- 1 cup pasta water
- 3 cups shredded mozzarella cheese divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup panko breadcrumbs
- 1 cup Parmigiano cheese freshly grated

- Spread the shredded chicken evenly on the bottom of the casserole dish.
- Add the cooked/drained pasta over the chicken.
- Pour the Marinara sauce and slightly mix to coat the pasta. (If you prefer you can place the cooked pasta into the Marinara sauce and mix to combine. Once the pasta is all coated, pour over the chicken and spread evenly). Add enough pasta water to ensure the pasta is good and saucy.
- Sprinkle 1 cup of shredded mozzarella cheese over the pasta, then sprinkle with the garlic and onion powder.
- Evenly sprinkle the breadcrumbs over the pasta, and top with the remainder of the shredded mozzarella. Finish by adding the Parmigiano.
- Bake in a preheated oven for 25 to 28 minutes or until it is nice and golden brown.
