This 5 Ingredient Meatloaf Recipe is a classic and delicious dish that is perfect for any occasion. It's an easy twist on the traditional meatloaf recipe but still gives you classic meatloaf flavors that your entire family will love.

Instructions

  1. Preheat the oven.
  2. Combine the hamburger, stuffing mix, grated cheese, ketchup, and eggs. Do not over mix!
  3. Transfer the meat mixture to a meatloaf pan or shape it into a loaf on a baking sheet.
  4. Place the meatloaf in the preheated oven and bake uncovered for about 40-45 minutes or until the internal temperature reaches 160°F.
  5. Once the meatloaf is cooked through, remove it from the oven. Let it rest for 10 minutes, loosely covered with foil. This allows the juices to be redistributed.

FAQ's

What is the secret to juicy meatloaf?

The secret to a juicy meatloaf is to not overmix the ingredients. Overmixing can result in a dense and dry meatloaf. Also, make sure to let the meatloaf rest after it's cooked, as this allows the juices to redistribute and keep the meat moist.

Should I cover meatloaf when baking?

No, you don't want to cover the meatloaf with aluminum foil while you are baking it, otherwise it will steam instead of bake. 

Should meatloaf mix be wet or dry?

The meatloaf mix should be wet but not overly soggy. You want the mixture to hold its shape when formed into a loaf but still have enough moisture to keep it juicy when cooked. If your mixture is too dry, you can add in some additional liquid such as milk or broth.

When making a good meatloaf it's important that you not overmix the meat. Overmixing can cause you to have a tough or dry meatloaf so mix until just combined. 

  • I don't recommend using lean ground beef for this recipe use a 20/80 blend.
  • Meatloaf is known to stick so make sure that you spray your loaf pan well with nonstick cooking spray to make cleanup easier. 

Variations

  • Not a fan of ground beef? You can use ground turkey or pork for your meatloaf. 
  • A ketchup glaze that is a mixture of ketchup and a little brown sugar would taste great on this tender meatloaf. 
  • BBQ sauce, tomato sauce, or brown gravy also makes a great glaze. 
  • For a cheesy touch to your meatloaf, you can also add a cup of shredded cheddar cheese. 
  • Add lots of flavor to your easy meatloaf recipe by adding a dash of Worcestershire sauce, garlic powder, onion powder, or even soy sauce to the meatloaf mixture. 

Storage

Refrigerate - Store leftovers in an airtight container in the fridge for 3-4 days. Make sure to keep them tightly sealed. 

Freezer -   You can also freeze your meatloaf by wrapping it tightly in plastic wrap and then placing it in a freezer-safe bag or container. 

Reheat: Reheat leftovers in the oven at 350 degrees Fahrenheit for about 15 minutes or until heated through.

Ingredients

  • 1 ¼ pound *ground beef
  • 1 package Stovetop Stuffing Mix
  • ½ cup grated parmesan cheese
  • 2 eggs
  • ½ cup ketchup + 2 tablespoons for glaze (optional)

Instructions

  • Preheat your oven to 375°F.
  • In a large mixing bowl, combine the ground beef, stuffing mix, parmesan cheese, ketchup, and eggs. Use your hands or a spoon to mix everything together until well combined. Do not over mix!
  • Transfer the meat mixture to a baking dish or shape it into a loaf on a baking sheet.
  • Place the meatloaf in the preheated oven and bake uncovered for about 40-45 minutes or until the internal temperature reaches 160°F. The cooking time may vary slightly depending on your oven and the thickness of the meatloaf. And whether you use a glass or metal pan.
  • *If you want to add an extra layer of flavor, you can brush the top of the meatloaf with additional ketchup or a glaze of your choice during the last 10-15 minutes of baking.
  • Once the meatloaf is cooked through, remove it from the oven. Let it rest for 10 minutes, loosely covered with foil. This allows the juices to be redistributed.

Notes

* Lean ground beef is great for this recipe. It holds together nicely and is perfect for meatloaf sandwiches. An 80/20 ground beef mix is great also as it adds a little more flavor and moisture to the meatloaf. 
* Optional glazes include ketchup, barbecue sauce or my favorite glaze is a sweet, brown sugar glaze. Combine 2 tablespoons ketchup, 2 tablespoons mustard and 2 tablespoons brown sugar. Mix and spoon over the meatloaf.

        Hmmm.... isn't bison super lean? (Which is one of the reasons it's so delicious!) You may want to add a good splash of milk to the stuffing mix and let it soak it up before adding it into the meat mixture Marsha. Just keep an eye on it and if so, start with 1/4 cup. I'm sure the Bison meatloaf will be absolutely amazing Marsha. Let me know how it turns out for you!
