Southwest Chicken Salad Bowl with Cilantro Lime Dressing

What is Freaky Friday you ask? Well 3-4 times a year I get together with several colleagues to make and share recipes from each other's blog and since this happens on a Friday.... well - you get it right? 🙂

I'm excited to share a recipe from Lemoine Family Kitchen! Let me tell you I scoured her blog because there are JUST. SO. MANY. AMAZING. RECIPES! At first I thought I'd share her recipe for Classic Meatballs and Spaghetti because it is authentic Italian deliciousness and absolutely fabulous!!!
Then I saw her recipe for Maple Bacon French Toast Bake (hello! Maple + Bacon? Yes please!) and thought that would be great because everyone is looking for yummy brunch ideas with Mother's Day on Sunday....
But I decided upon her Southwest Chicken Salad Bowl with Cilantro Lime Dressing because....well, just look at this!!
It's light, bright and delicious - total salad bowl yumminess and a hearty filling meal without weighing you down! Perfect for summertime!
I followed Angela's recipe and prepared the rub. I slathered it on the chicken breast, then tucked it into the refrigerator for about thirty minutes. From there it is simply grilling the chicken and preparing the salad bowl!
When it came to making the salad dressing I changed one thing - instead of a garlic clove, I added ¼ teaspoon of garlic powder (raw garlic is too strong for me, yes I'm a baby!) and rather than chopping everything finely and whisking, I tossed the ingredients into the blender and gave it a whiz (you know... because I'm lazy! 😀 ).
It's delicious, totally!
This salad bowl exemplifies that salads don't have to be boring, don't you agree?!!!
Chopping the salad ingredients didn't take any time at all and rather than dice the red onion, I like slicing it into thin slivers. I used cherry tomatoes (so flavorful right now!) and rinsed/drained a can of black beans really well and added them also.
Everything is laid on top of a bed of crunchy romaine lettuce. How delicious does this Southwest Chicken Salad Bowl look?
Southwest Chicken Salad Bowl
- 1 large chicken breast
- Spice Mix
- 2 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- ½ teaspoon cumin
- 2 tablespoon olive oil
- 1 avocado
- ½ cup tomatoes diced
- ¼ red onion thinly sliced
- 1 head romaine lettuce chopped
- 1 can black beans rinsed and drained
- For the dressing
- 3 limes juiced
- 2 tablespoon olive oil
- ¼ teaspoon garlic powder
- In a small bowl mix together the chili powder, salt, garlic powder, oregano, cumin and olive oil.
- Slather the rub all over the chicken breasts. Let it sit on there for about 30 minutes in the fridge.
- Grill the chicken for about 5 minutes per side, depending on the thickness of the chicken. When the juices run clear, the chicken should be cooked through. Allow to rest a few minutes before slicing
- Make the dressing in a little bowl or mason jar. Mix up the lime juice, olive oil, cilantro, garlic, salt and pepper.
- To assemble the salad, start with the romaine and top with some tomato, avocado, red onion and black beans.
- Top the salad with the sliced grilled chicken and finish it off with that refreshing lime dressing.
