- Preheat oven to 400°F.
- Wash the potatoes and cut them into bite-sized pieces.
- Combine the Lipton Onion Soup Mix in a large mixing bowl with olive oil or melted butter. Stir until well combined.
- Add the diced potatoes to the bowl. Toss the potatoes until they are evenly coated with the mixture.
- Season the coated potatoes with salt and pepper.
- Spread the potatoes evenly on a baking sheet lined with parchment paper or aluminum foil, ensuring they are in a single layer.
- Bake in the preheated oven for about 25-30 minutes or until they are golden brown and crispy on the outside, and tender on the inside.

Boiling them first can reduce their roasting time, but it is an unnecessary step.
The key to keeping roasted potatoes crispy is to cook them at a high temperature. This helps create a crisp exterior while maintaining a fluffy interior - YUM!
If your potatoes are not crisping up in the oven this usually means that you have overloaded your pan. If the air can not move freely around the potatoes, they won't get crispy.
Top Tip
I prefer to use parchment paper for roasting, as it helps to prevent the potatoes from sticking. If you are using aluminum foil instead, I recommend spraying well with cooking spray before you add the potatoes.
- When you wash potatoes make sure that you give them a good scrub, because we are not peeling these potatoes you want to get rid of all the dirt on the outside.
- The cooking time can vary based on the size of your potatoes. So, if you cut them into large chunks, you must increase the cooking time. So, adjust your time based on the size of the cubes.
Variations
- You can use any type of potato such as russet potatoes or red potatoes. I prefer the creamy texture and buttery flavor of Yukon gold potatoes.
- Want to add some more great flavor to your diced potatoes? If so, add onion powder, garlic powder, or even a dash of cayenne pepper to your seasoned potatoes.
- Love cheese? Add some freshly shredded cheddar cheese to the top of these potatoes in the last minutes of baking for a cheesy flare.
Storage
Refrigerate - Store leftover roasted potatoes in an airtight container in the fridge for 3- 4 days. If you manage to have leftovers that is!
Freezer - You can freeze these potatoes for up to 4-6 months. However, the texture may slightly change upon reheating.
Reheat - In my experience, the best way to reheat potatoes is in the oven at 350 degrees for 10-12 minutes. Or you can also reheat them in the air fryer at 350 degrees for 4-5 minutes.
