All you need are a few pantry staples and a packet of Lipton onion soup mix to turn ordinary potatoes into crispy, golden bites packed with bold savory flavor. They roast up with irresistible edges and tender centers, and they disappear fast! So go ahead and double the batch.

These potatoes play nicely with everything from weeknight chicken to Sunday roast, making them the kind of easy side dish you'll make on repeat!

Lipton Onion Soup Mix Roasted Potatoes

Equipment

  • 1 Large mixing bowl
  • 1 chef's knife
  • 1 sheet pan

Ingredients

  • 2 pounds Yukon Gold potatoes washed and cut into 1-inch pieces
  • 1 ounce packet of Lipton Onion Soup Mix
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat your oven to 400°F.
  • Wash the potatoes thoroughly. Dry them with a paper towel and cut them into bite-sized pieces. (1-inch pieces)
  • Combine the Lipton Onion Soup Mix in a large mixing bowl with olive oil or melted butter. Stir until well combined.
  • Add the diced potatoes to the bowl. Toss the potatoes until they are evenly coated with the mixture.
  • Season the coated potatoes with salt and pepper
  • Spread the coated potatoes evenly on a baking sheet lined with parchment paper or aluminum foil, ensuring they are in a single layer.
  • Bake in the preheated oven for about 25-30 minutes or until they are golden brown and crispy on the outside, and tender on the inside. Make sure to stir the potatoes halfway through the cooking time for even browning.

Notes

Storage - Store leftover roasted potatoes in an airtight container in the fridge for 3- 4 days.  You can freeze these potatoes for up to 4-6 months. However, the texture will slightly change upon reheating. 
Reheat - In my experience, the best way to reheat potatoes is in the oven at 350 degrees for 10-12 minutes. Or you can also reheat them in the air fryer at 350 degrees for 4-5 minutes.

Is it good to boil potatoes before roasting? 

Boiling them first can reduce their roasting time, but it is an unnecessary step.

How do you keep Lipton Onion Soup Potatoes crispy?

The key to keeping roasted potatoes crispy is to cook them at a high temperature. This helps create a crisp exterior while maintaining a fluffy interior - YUM!

Why are my potatoes not getting crispy in the oven? 

If your potatoes are not crisping up in the oven this usually means that you have overloaded your pan. If the air can not move freely around the potatoes, they won't get crispy.

Top Tip

I prefer to use parchment paper for roasting, as it helps to prevent the potatoes from sticking. If you are using aluminum foil instead, I recommend spraying well with cooking spray before you add the potatoes. 

  • When you wash potatoes make sure that you give them a good scrub, because we are not peeling these potatoes you want to get rid of all the dirt on the outside. 
  • The cooking time can vary based on the size of the dice. If you cut them into large chunks, increase the cooking time. So, adjust your time based on the size of the

Flavor boost ideas

You can use just about any potato you have on hand, whether that's russet or red, but Yukon golds are my favorite for their creamy texture and naturally buttery flavor. If you want to boost the seasoning, sprinkle in a little onion powder, garlic powder, or even a pinch of cayenne for a subtle kick.

And if you're in the mood for something extra indulgent, add freshly shredded cheddar during the last few minutes of baking so it melts right over those crispy edges.

    Ok .. this recipe is essentially great but if you really want to take it to next level, add about a tablespoon of dry ranch seasoning ( found at the Dollar Tree store) , and a half of a sweet onion , sliced in quarters then eights. I don 't add the butter but it sound like a good idea if you like this. I don't peel my russets either. Bake at 375 degrees for one hour... half way through cooking time, you need to take out and mix them up so they don't stick I Use olive oil and I bake in a glass roasting dish. Some times I add a tsp. of salt free seasoning to the mixture. You ought to smell the aromas from my kitchen right now!

    I make these quite often using russet potatoes and before taking out of the oven, I do sprinkle cheese (your choice) on top just until slightly melted (you now have roasted, cheese potatoes)
