- Preheat the oven to 350 degrees.
- Season chicken thighs.
- In a large skillet, heat oil; brown chicken. Remove from pan, reserving drippings.
- In the same pan, saute shallot and garlic in the pan drippings until the garlic becomes fragrant.
- Next, stir in the jam, broth, horseradish sauce, and half of the green onions.
- Place browned chicken into the sauce. Cover the skillet and place in the preheated oven for 15-20 minutes until the chicken is done.
- Serve the chicken with the sauce spooned over the top. Top with remaining green onions. Enjoy!

Storage
Refrigerate - Store leftover chicken in an airtight container in the fridge for 2-3 days. I like to use a glass container with a tight fitting lid, however a storage bag would work as well.
Freezer - If you want to store the chicken longer, it can be frozen for up to 3 months. When ready to use, defrost in the fridge overnight before reheating.
Reheat - The best way to reheat leftovers is in a 350°F oven for 15-20 minutes or until it reaches an internal temperature of 165°F. But, if your chicken starts to dry out, add a splash of chicken broth to moisten it back up.

- 6-8 bone-in chicken thighs or 4 chicken breasts I used skinless chicken
- ½ teaspoon salt
- ½ teaspoon chili powder
- 1 tablespoon olive oil

- ½ cup apricot jam
- 4 green onions sliced, divided
