Green beans with bacon and onions in brown bowl

Instant Pot Green Beans

A trip to the farmers market this week brought a bounty vegetables and fruit. It always amazes me how much you can get for $20 bucks.

Apricots, nectarines and peaches - broccoli, cauliflower and strawberries. Hoping to see figs soon (they are one of my favorites!) and a pile of green beans.

So with all of these fresh green beans I knew it was time for another easy pressure cooker recipe.

I wanted to make sure it was simple like my 3 Ingredient Steamed Green Beans but this time decided to bump up the flavor with simple southern ingredients. Bacon, garlic and onions!

This recipe is one my Mom has been making for some time. I've tried it now too and knew I had to share it with you!

Ingredients

  • green beans
  • bacon
  • onion
  • garlic
  • chicken bullion

FAQ's

How do you choose fresh green beans?

Look for beans that are bright green and snap easily. Discard beans that are limp or brown. Choose beans that are similar in size and shape. They will cook uniformly.

Can I use frozen green beans for this recipe?

Yes, you can substitute frozen green beans for fresh but do not use French cut. They are too thin and would quickly overcook.

Can I substitute ham for bacon?

Absolutely! If you do, quickly sauté the onions and ham for just a minute or two prior to adding the green beans.

How long do I cook green beans in the pressure cooker?

For crispy green beans, set your pressure cooker to 0. If you like softer vegetables, set your timer to 2 minutes. Super tender, increase the time to 4 minutes. Quick release at the end for all options.

Stovetop and Slow Cooker Directions

  • Stovetop Directions - Clean, dice and chop the vegetables. Over medium heat, sauté in a pot on the stove starting with the bacon, for five minutes, then add the onions and garlic and saute for another five minutes until the onions are tender. Add the chicken bouillon cube, water and beans. Cover and simmer for 20-25 minutes until the beans are tender.
  • Slow Cooker Directions - prepare the bacon, onion as described above. When the onions are soft, as the water and bouillon cube and dissolve. Add the beans to your crockpot, pour the bacon, onion mixture over top. Cover and cook on low for two hours.
