This gooey, cheesy quesadilla dip recipe is perfect for watching the game. We love the combination of flavors, there's a little crunch, tons of creaminess and just a bit of heat!

What makes this recipe irresistible

Okay, now let me tell you about this Quesadilla Dip! It's a little spicy, a little gooey, and cheese-filled. It's sweet and creamy with just a hint of spice. If you like a spicy, sweet, creamy dip (and who doesn't?!!) this Quesadilla Dip is perfect for your next party!

Grab a chip or a quesadilla and settle in to watch the game. It's perfect for movie night or tailgating.

Ingredients you'll need

  • cream cheese
  • green onions
  • shredded chicken breast
  • Colby jack cheese
  • red and green bell peppers
  • pepper jelly or jam
  • crackers, chips and your favorite dippers

Creative variations to try

This is easy to make in the crockpot. Place all of the ingredients in your slow cooker. Cook on low for 2-3 hours or until hot and bubbly. I love this variation because it get you out of the kitchen and back to the party!

Skip the shredded chicken for a vegetarian dip option.

  1. Preheat the oven. Spray the baking dish with non-stick cooking spray.
  2. Add all ingredients to a medium mixing bowl.
  3. Combine ingredients. Spoon them into the prepared baking dish.
  4. Bake until hot and bubbly. Garnish with sliced green onions.

Can I make quesadilla dip in advance?

Yes, this can be made up to two days in advance. Remove from refrigerator for 10 minutes before baking. Bake for 20-30 minutes until hot. (It may take a few extra minutes to bake because the casserole is cold.)

What are the best dippers?

The dip is a little sweet, so salty or fresh vegetables are best. Thick tortilla chips, mini peppers, celery or carrots.

Tips for easy entertaining

When it comes to party food, keep it simple too!  Don't try and make everything yourself. Buy some sandwiches & cut them into quarters (easy & affordable!) Have some napkins nearby so folks can grab & go.

It's ok to say yes to needing help! If someone offers to bring an item, The answer is always yes.

This year, I'm putting together a buffet, and here are a couple of shortcuts I try to remember. 

Keep it simple Rule #1 when it comes to easy entertaining.

  • You want to make it easy & convenient for everyone to grab a beverage.
  • For a casual get-together, you can fill one side of the double sink with ice.
  • Or fill a large container with ice and it becomes a perfect beverage cooler.
  • No standing around the stove, or hanging out in the kitchen.... There's basketball to watch or a party to enjoy!
  • Fingerfood is a must! Make family favorites like Pico de Gallo and Quesadilla Dip!

And my last tip? Prep for the game in advance because if you're like me... you want to be able to watch the game too!

How to store leftovers

Refrigerate - allow to cool completely. Refrigerate leftovers in an airtight container or covered with plastic wrap.

Repurpose your leftovers

The leftover dip is terrific on a tortilla roll-up, a great filling for a quesadilla or stuffed into celery, yum!

Ingredients

  • 8 ounces brick cream cheese softened
  • ½ cup green onions sliced
  • 1 cup chicken breast cooked and shredded
  • 1 cup shredded Colby jack cheese
  • ½ cup red and green peppers diced
  • ⅓ cup hot pepper jelly
  • crackers, chips and your favorite dippers

Instructions

  • Heat  oven to 350°F. Spray 8" baking dish with non-stick cooking spray.
  • Add all ingredients to a medium mixing bowl.
  • Using a wooden spoon or hand mixer, combine ingredients, add to prepared baking dish.
  • Bake 20 min. or until hot and bubbly. Garnish with additional sliced green onions.

      This dip has me drooling! Warm dips are like my favorite thing to eat. My only issue w/ this dip is that I'm afraid I'm going to eat the entire bowl!!!

      Super helpful post! I always end up either running around when catering for a party or just never actually find the time to go out and speak with friends and enjoy myself! I also hate it when there are messy options like chicken wings - which are so delicious yet impossible to eat while balancing a drink in one hand and simultaneously trying to look classy while you eat it haha 😀

      This quesadilla dip looks amazing! Perfect for me - I think dip is my favorite food! Well, and anything Mexican. So I love this one. And, Wheat Thins are my favorite cracker - tasty on their own, but they don't "get in the way" of the dip flavors!
