- olive oil
- lean ground beef
- yellow onion
- a packet of taco seasoning or use this recipe for homemade taco seasoning.
- fire roasted tomatoes
- light red kidney beans
- Rotel tomatoes or diced tomatoes and chilies
- sour cream
- sharp cheddar cheese, Monterey Jack cheese or a pre shredded Mexican cheese blend.
- Nacho Cheese Doritos Chips or Cool Ranch Doritos - use your favorite!
- cilantro for garnish

Instructions

- Pre-heat the oven to 375°F.
- Add the olive oil to a large skillet and heat up over medium-high heat. Add the hamburger and brown ground beef until it is no longer pink.
- Add the diced onions and cook until soft, about 5 minutes.
- Add the taco seasoning, fire roasted tomatoes, tomatoes and chilies and beans and heat through.
- Add the sour cream and turn off the heat. Stir until well combined.
- Lightly spray a 9 x 13” Casserole dish with cooking spray then take 2 cups of the Doritos and evenly line the bottom.
- Spoon half of the meat mixture over the crushed chips, then sprinkle with 1 cup of cheese.
- Repeat with the remaining meat mixture and another layer of cheese.
- Finish with a light layer of crunchy Doritos that are not quite as crushed. Big chunks.
- Then just a ½ cup sprinkle of cheese.
- Cover with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for a further 5-10 minutes, until lightly brown on top.
- Sprinkle with a little chopped cilantro, then serve with your favorite taco toppings (sour cream, cilantro, green onions, chopped tomatoes, lime, avocado etc)

This easy Dorito Casserole can be easily reheated in the microwave. If you want the topping to get crunchy again, then reheat in the oven or air fryer in an oven safe dish.

No, you can use whatever flavor of corn chips you prefer. By all means, mix it up!

Things to know
- Using pre-shredded cheese makes this casserole that much easier to make.
- Crushing the chips is easy when you leave them in the bag. You can crush by squeezing or using a rolling pin. Just don't crush them too small, you want texture, not dust.
- If you prefer to crispy up the chips, microwave until it's hot, then transfer it to a hot cast iron skillet. That will help crisp up the bottom of the casserole - yum!
Variations
- Lighten up your meal by using ground turkey meat or ground chicken.
- Substitute black beans for the kidney beans if you'd prefer - so tasty!
- Adding cream of chicken soup, cream of mushroom soup, or nacho cheese soup makes this even creamier!
- Frozen corn or canned corn (drained), green chiles is a great addition to the casserole dish.
- Diced bell peppers would be yummy. Add it to the ground beef mixture after it's browned.
Storage
Refrigerate - Allow to cool completely, cover well or place in an airtight container. Refrigerate up to three days.
Freezer - This freezes well. You may want to add a little extra cheese when you reheat it. Freeze up to three months.
Reheat - Thaw overnight in the refrigerator. I prefer to reheat in the oven, though you can certainly reheat in the microwave, but it won't get crispy.
