This Crockpot Hamburger Potato Casserole recipe is layers of tender potatoes and hearty ground beef with a creamy sauce that is all topped with cheesy goodness. If you are looking for a simple yet hearty meal to make for busy weeknights this is the recipe for you.

  • small russet potatoes
  • ground beef
  • cream of mushroom soup
  • evaporated milk
  • packet ranch mix
  • shredded cheddar cheese

Instructions

  1. Spray the crock pot with nonstick spray.
  2. Brown the ground beef and drain.
  3. Combine the cream of mushroom soup, evaporated milk, and ranch mix in a mixing bowl. Whisk together to combine.
  4. Peel and slice potatoes.
  5. Add a ladle full of the sauce to the bottom of the crockpot. Now layer in the sliced potatoes, beef, soup, and cheese. Repeat layers finishing with the cheese. Place lid on top.
  6. Cook on low for 5-6 hours or high for 3-4 hours or until the potatoes are soft.
  7. Turn off the crock pot and allow it to cool. This allows the casserole to thicken. Serve and enjoy!

Deb's tips

  • I always spray my slow cooker well with nonstick cooking spray to make clean-up easy. However, if you want to save even more time, you could use a slow cooker liner instead.
  • I recommend using a very sharp knife to get even slices of your potatoes.
  • My favorite garnish for this dish is sliced green onions or a dollop of sour cream.
  • I prefer to cook this dish on the low setting because I think the longer it cooks, the more flavor the potatoes can absorb, but cooking on high will also work.

Variations

  • If you want to add more flavor to this cream sauce, add extra onion powder, garlic powder, or even a dash of Italian seasoning.
  • Are you a fan of a little spice to your meal? Add a dash of black pepper or red pepper flakes.
  • If you need to add more vegetables to this dish, diced bell peppers, carrots, celery, and zucchini can all make great additions.
  • You could try ground turkey if you want to make this recipe a little healthier.
  • Using evaporated milk in this recipe really gives this dish a rich flavor. However, you can use regular milk instead if you want to avoid a trip to the grocery store.

Storage

Refrigerate - Store your leftover casserole in an airtight container for up to 4 days.

Freezer - Potato just don't freeze well, so I don't recommend freezing this dish. Don't worry though; the leftovers taste great the next day!!

Reheat - To reheat this dish, you can either use the microwave or heat it oven in an oven-safe dish covered with aluminum foil at 350 degrees for 12 - 15 minutes or until warm all the way through.

Slow Cooker Ground Beef and Potatoes

Ingredients

  • 6-8 small russet potatoes peeled and sliced
  • 2 pounds ground beef browned and drained
  • 2 10.5 ounce cans cream of mushroom soup do not delute.
  • 12 ounce can evaporated milk
  • 1 ounce packet ranch mix
  • 2 cups shredded cheddar cheese
